A very classic and clean “Huehue” coffee. Malty and winy are the first notes to hit the tongue. If you shoot a little lighter in your roasting, you get citrus and soft fruit acidity mixing with the winy factor. A clean enough cup to roast light for sure but will be front-loaded with acidity. Medium roasts really bring forth the balance in the cup and develop a little sweeter edge. Dark roast cut most of the acidity and winy tones out of the cup and gets much fuller bodied malty and smoky.

Description

This is the next best thing to Finca Vista Hermosa (which we should be getting a couple bags later this calander year). Edwin’s direct neighbor and at a little higher altitiude than Edwins main fields.

Driving the narrow mountain road up an impossibly steep slope to Finca La Colmenita, or “The Beehive”, the views are striking. The valley stretches out below, and Edwins family farm, Finca Vista Hermosa sits just beneath. There’s a reason this area is called Buena Vista!

When Francisco Cardona Martin bought La Colmenita in 2002, he had a vision: To produce the best quality coffees possible, by planting varieties known for excellence in separation, and investing heavily in equipment and farming techniques. Francisco is incredibly resourceful, drying his coffee on a patio he built on top of his house and investing nearly all profits from coffee sold back into the farm. He often attends cuppings with our QC team in Huehue to develop his skills and to learn where he can improve.

Roasting Notes: A very stand up cup, good tasting but a shame to dark roast. Francisco hand built this coffee with a couple different strains, which leaves it a little two toned in its roasting. Make sure if shooting for a light roast that those 10% of lighter roasting beans get through first crack. This coffee will sheen up and darken up a little earlier than most – can easily be a roast level lighter than it looks.
