A very fun and wild old world natural. Very fruity and sweet cup full of slow dry natural tones. Our first PNG Natural!
This coffee is coming from the same area that our buddies from Carpenter Estates produce in. They even have an estate in Kindeng, but this specific offering is coming from an aggregation mill.
Naturals are very challenging to produce in PNG, they have to be slow dried in the sun, but not too slow or the cherries will mold. During harvest time, PNG is prone to rain, which adds layers of complexity to producing awesome naturals.
Although Carpenter Estates will start producing naturals next season, when we tasted this offering we couldn’t help but to grab it!

Tasting Notes: Light to dark, a super tasty fruit forward natural. Lighter roasting will have some citric acidity and strong red fruit tones, pulls just a hint of balance with a chocolate/nutty darker tone. Hints of an herbal note but pretty faint, mostly noticeable as the cup cools. Medium roasts get more chocolaty and a bit fuller bodied, still incredibly sweet and fruity but less sharp, cutting out most of the citric component. Darker roasts have a strong bakers chocolate tone, slightly smoky with an almost cherry like red fruit note popping out.
Roasting Notes: If you are not used to roasting old world naturals, be prepared for a bit of uneven roasting a high chaff. Normal for an offering like this. All in all, easy to roast, just have to watch it a little closer for lighter roasting, make sure there are not too many golden/pale colored beans before hitting cool or dumping. If shooting light, you may want to flick anything still pale or golden colored or risk a little grassy tone. Tasty from light to dark but for most, keep it before 2nd crack. A wild cup, giving it a couple days to rest before drinking will give the cup better definition.
