Great from light to dark. These beans bring forth the softer nutty and chocolaty tones that many consider the “go to” for daily drinking. A sweet edge to the cup, lower acidity, medium bodied and would be considered on the chocolaty side; depending on roast level, nutty/floral/fruity/smoky like tones can be found as well.

Light roasts are a little sharp and risk a little hint of herbal but will also bring out a wonderful balance with an orangish fruit tone, a bit more exotic but sharper. Medium roasts were smooth and clean, our favorite roast point. Darker roasts work well for those looking for a stronger and semi-sweet cup with a smoky finish.

Description

A very tasty & traditional El Salvador coffee. A clean, smooth and rich cup, mostly nutty & chocolaty tones but with a little jazz on top. A great daily drinker!

Coming from a family-owned farm located near the town of Apaneca within the department of Ahuachapan, El Salvador. The Dada Peña family owns and operates La Cubana and San Gabriel, two parcels of land coming together to make one farm. They have an ideal micro-climate for coffee cultivation being in Apaneca/Ilametepec mountain ranges, one of the most prestigious areas of coffee cultivation in the country.

La Cubana and San Gabriel are firmly committed to educating the children living near the farms. They donated land to the ministry of education and a primary school was built where 85 children are now enrolled. Each year, La Cubana and San Gabriel funds school events to promote sports and culture.

Roasting Notes: Medium to low chaff and easy to roast. We liked it best right in the middle, half way to second crack. If shooting lighter, give it a 3-4 day setup to rid the cup of any herbal tones. Medium to dark, a great cup after 12-24 hours.

    Roasted in SR800 passed first crack, a medium roast. As advertised a low chaff bean. Light citrus notes, smooth well balanced cup.
