We carefully screen our coffee and here is an unusual opportunity for you to pick up slightly lower grade coffees that didn’t make the main list. Generally local blenders pick it up but we had a couple of larger lots so are offering it to our home roasting customers.

A Colombian Pacamara and Ethiopian Gr. 2 Kochere. A bit herbal and earthy for our tastes which is why they ended up on the blowout pallet but we firmly believe there is joy to find in these beans for the right person or operation.

Dark (French) roasting, cold brew, cream and sugar coffee, blender beans, flavored beans, they will work fine. Although not touted as the best coffee, we found it still better than half the stuff on the store shelfs in our recent tasting of them.

Tasting Notes: Best at a darker roast point. Light to medium roasts will have some crisp acidity and a sweet edge but accompanied with an earthy semi-paper like taste. Develops a more rustic chocolaty factor instead of paper like on the strong side of medium to dark roasting. Once you are into the dark roasts, robust cup with semi-sweet chocolate and smoky tones, hints of complexity as the cup cools. A little papery in the aromatics.

Produced by Terra Coffee SAS, which works directly with small groups of farmers in Huila and Nariño. This traceable washed processed community blend of the Pacamara variety comes from 36 producers with small farms in the community of Argentina within the municipality of Salado Blanco. Each producer has their own micro-mill where they carefully harvest cherries, depulp, ferment for up to 60 hours, wash, and gently dry the parchment on raised beds. Imagine the harmony between these producers in farm management and post-harvest practices to achieve a clean and consistent blend.

Roasting Notes: Easy to roast, medium to low chaff and fairly even. Good to hit 2nd crack or go a little bit into it. A great coffee for cold brew, the papery notes and aromatics disappear. If using for daily drinking, a long setup time also made the cup much better, 7-10 days after roasting it was a much cleaner cup and we found it acceptable even at a medium roast if you can wait.
