Maui Coffee is Back!
It’s been about three years since we have seen Maui coffee due to the wildfire. They are finally rebuilt and back in action! Good to have friends in high places: our pallet was the first to leave the island since the wildfire. Maui coffees are very tasty more classic coffees, medium to dark roasts, sweet edged with unique islandy floral/fruit notes. Lower grown than the big island Kona coffees, they are lower acidity and darker toned offerings, more on the nutty/chocolate side of things. The Maui Mokka is their claim to fame, actual Mokka coffee from Yemen that they have been cultivating for many years.

From El Salvador, originating in Ahuachapán in the Apaneca-Ilamatepec mountain range (an area linked to the Ruta de las Flores, or Flower Route), cultivated on volcanic slopes at around 1200 meters above sea level. This altitude favors dense beans and a balanced, sweet, and very clean cup. It is a washed process lot that combines the Bourbon Rojo, Pacas, and Cuscatleco varieties (the latter developed locally to support the renewal of coffee plantations in the face of coffee rust without sacrificing cup quality). In terms of sensory profile, it is described as a simple yet refined cup: it begins with apple and brown sugar, evolving towards toasted nuts, caramel, and a lingering, slightly almondy finish with moderate and pleasant acidity.
