Best from a medium to dark roast, wet-hulled coffees are not light roast coffees no matter how premium of an offering. Hints of citric crispness and soft fruit with a little sweeter chocolate edge, pulls some balance with some earthy spice (the good kind). Very clean cup for a Sumatra that is drinkable and balanced from a medium roast and beyond. The darker you roast, the fuller the body gets along with reducing any hints of acidity. Into second crack will turn more into a chocolaty spice noted treat but will reduce the sweeter edge. Picks up some complimenting roasty and smoky tones into the more bakers chocolaty cup profile.

Its been a long time since we found a nice certified Sumatra coffee. This is a pretty classic but very tasty example, fresh as can be. If you don’t know, wet-hulled coffee out of Indonesia is a very unique processing job, leaves the beans far less pretty than American or African offerings. They bloom into beautiful cups at fuller roast levels, very low acidity with stronger earthy/chocolate/peat likes tones, cool unique spice notes linger on the tongue.
Wet-hulled (Giling Basah) lot from the Putra Tani Berkarya cooperative, grown between 1200 and 1400 MASL in the Gayo Highlands of Bener Meriah, Aceh. A traditional Sumatra cup with heavy body and low acidity, best from medium to dark. At medium it is balanced, with a soft winey acidity, sweet spice, and an earthy chocolaty backbone; at dark it turns smoky, full bodied, with bittersweet cocoa notes.
