A very rich, strong and smooth cup. A cousin to Sumatra or Sulawesi coffee; Blue Moon always is a bit smoother without as much peaty earthiness, or swampy fruit. A sweeter cup for an Indo with malt, chocolate with a little traditional earthy terroir of the wet-hulled Indonesians. Fuller bodied, a little hint of acidity at a medium roast, a definite go to for our strong-medium or dark roasts here at Burman Coffee. Pulls some molasses undertones as ones pushes into second crack roasts. Hints of slight smoky tone at darker roast.

One tasty Indonesian bean for you natural processed fans. A hint of citric brightness comingles with stronger fruit tones, balancing with some classic Indonesian chocolate and earth notes. Very sweet for a Indo but will be fruity enough where traditional wet-hulled fans may not like it. Unlike its wet-hulled cousins, fruity naturals shine at the light to medium roast levels. Crisp, clean, sweet, balanced and exotic. The darker one goes, the more traditional Indonesian tones in the cup but there will be no missing the natural processed fruitiness, comes off a bit boozy and oaky at the fuller roasts giving great depth for some but can turn a little bitter/sweet if you touch 2nd crack or go darker. Still tasty for an Indo fan but the lovely light-medium roasts are where most will think it best.

Low acidity, thick and creamy, with small hints of fruit balancing with a strong earthy chocolaty undertone. Quite the tasty treat and surprisingly for an Indonesian, the best roast we found on this one was in the strong medium roast range. Smooth, clean, balanced and exotic: mostly a chocolaty cup with a sweet edge, slight hints of fruit and earth. Lighter roasts show just a hint of citric crispness with a little herbal chocolate contrast, accentuates the fruitiness but it is not over the top, too light can come off a bit grassy, make sure the beans are through first crack to just past. A very clean traditional Sumatra cup. Best from medium to dark roasts. Fuller bodied with some nice exotic incense spice notes intermingled with a bakers chocolate and smoky cup profile. Light roast are not recommended (for almost all Indo coffees). Medium roasts were nice and balanced, a little lemony acidity upfront mixing with a bunch of spice and hints of an earthy slightly peaty chocolaty factor; a decent roast point for pour-overs or drip. Best from a medium to dark roast, wet-hulled coffees are not light roast coffees no matter how premium of an offering. Hints of citric crispness and soft fruit with a little sweeter chocolate edge, pulls some balance with some earthy spice (the good kind). Very clean cup for a Sumatra that is drinkable and balanced from a medium roast and beyond. The darker you roast, the fuller the body gets along with reducing any hints of acidity. Into second crack will turn more into a chocolaty spice noted treat but will reduce the sweeter edge. Picks up some complimenting roasty and smoky tones into the more bakers chocolaty cup profile.
