We found this cup best from medium to dark roasts. Great balance, pronounced malt like and nutty tones with just a splash of a winey crispness to keep it interesting. A classic Guatemala with an inviting, straightforward profile. Lighter roasts have a silky mouthfeel and medium body, a pronounced floral/citric brightness, leans toward orange zest. The core is nutty, down the almond alley, supported by a chocolate/caramel underpinnings that round the cup. Good to let light roasts setup a bit longer or risk a little herbaceous tone. Medium to dark roasts bring out the larger body and reduce the brighter characteristics, making the dominate taste malty and nutty tones, medium roasts will have a pinch of citric for balance, dark roasts will not. A sweet cup until you touch second crack, then turns a bit bittersweet. Best tasted hot: at higher temperature the floral and citrus notes shine; as it cools they soften and the almond–chocolate side comes forward, keeping good sweetness and a comforting feel.

A great super fresh example of Antigua coffee, follows those wonderful floral versus chocolaty notes that made the region so famous. Medium roasts are recommended but good from light to dark. Lighter roasts will accentuate the lemony floral tones of the cup, the chocolaty factor will be just a hint but noticeable and smooth, a bit of nuttiness will linger in the aftertaste not present in further roast levels. Medium roasts are very clean and balanced – not too acidic, not too bitter – sweet edged and will have wonderful mix of tones. Darker roasts and smooth and semi-sweet, low acidity and very chocolaty.
