I always love the Kona profile. We thought these beans to shine from a medium to dark roast. Lighter roasting will produce hints of a fruity island acidity balanced with a chocolaty/nutty undertone, jazzed up with a hint of herbal spice in the aftertaste. As the roast progresses the cup gets pretty low acidity and the nutty and chocolaty factor will get accentuated. A super cool & exotic cup of Kona. Higher acidity with strong tones of citrus, floral and red fruit. Very wild up front balanced with a sweet chocolaty caramel like tone. A little different than last years batch with the higher acidity levels but just as tasty in my mind. Lighter roasts are front loaded with the floral and fruit tones; tasty but you have to like acidity. A cool cup from medium to dark. There are some sweet island floral tones upfront at the lighter roasts, a sweet edge with unique spice; somewhere between a woody cinnamon to more peppery/clove. Wonderful aromatics accompany lighter roasts but could be a little too grassy/sharp for some. Medium roasts are more chocolaty, balancing with the spice nicely, less woody, more bold semi-sweet clove like spice.
