Description
Banko Gotiti is a village in the Gedeb district of southern Ethiopia’s Gedeo Zone an area that sits just south of Yirgacheffe and is often grouped under the “Yirgacheffe” name because of its closely related cup profile. The coffee’s name comes directly from this place: Banko Gotiti is both the community and the cooperative/washing-station network that gathers and processes cherry from local smallholders.
Coffee production here is defined by thousands of very small farms often more like “coffee gardens” than large plantations where coffee grows under shade in lush, highland vegetation. The combination of elevation and microclimates across these hillsides helps create the clean, complex character that made Yirgacheffe famous, with lots from different micro-areas expressing slightly different nuances.
Ripe cherry is delivered to a local washing station and processed as a classic Ethiopian washed coffee: the fruit is depulped the same day it’s picked, fermented briefly, then washed clean and dried slowly on raised beds. The result is a bright, precise cup that highlights the elegance Ethiopia is known for, built from a mix of native heirloom Ethiopian varieties.
Tasting Notes: A wonderful example of a top grade washed Ethiopian. Best served in the light to medium roast range, a very delicate and sweet cup. Hints of citrus and soft fruit comingle with floral, caramel, chocolate and tea like spice. Heirloom Ethiopian strains have a taste like no other and offerings like this one showcase their uniqueness. For acidity fans, a light roast ending real close to 1st crack will have a stronger lemony citric edge, covers up a bit of the delicate floral/fruit but crisp, clean and sweet. We personally liked it better just a shade or two darker, splitting the difference between light and medium. It will mellow the citric tones popping out the sweet floral, while building a bit more sweet caramel/chocolate darker tone with a hint of tea like spice in the aftertaste. Crisp but not overly acidity. Darker roasts go the other way covering up the citric and floral with strong chocolate and herbal tones. The aromatics are fantastic on these beans and will add wonderful floral depth to the tastes.
Roasting Notes: Shines in the light to medium range. A lighter roast will emphasize the floral top notes and crisp acidity; Nudging slightly deeper builds more caramelized sweetness and rounder stone-fruit depth. If roasted too dark, the delicate florals and fruit character can fade in favor of heavier chocolate/roast tones best to avoid pushing far into second crack if you want the classic washed-Ethiopia sparkle.
