Description

Out with the old, in with the new. We are on a verge of a new crop in Guatemala, our buddies farms will start coming in around July/Aug. Edwin still has a couple super cool lots from his close friends that he gave us a deal on we couldn’t refuse. High class great tasting Guats at a very good price.

This is a neighboring farm to Finca Vista Hermosa in Huehue. A special chop from Vista Al Bosque they put together with Edwins help.

Mr. Wilmar Castillo, owner of Vista Al Bosque has had dreams of being a premium coffee producer since he still young and unmarried. He traveled with his father and three older brothers, from village to village within Hoja Blanca working on other peoples’ coffee farms, learning as much as he could along the way.

His dream was to have his own farm and he worked very hard to achieve it. Coffee has always been part of his life and he always saw his dad work with love and passion within coffee. Seeing that motivated him to work hard to save and slowly purchase Vista al Bosque (the farm overlooking the forest) which has owned for over 18 years. Currently he oversees the farm with his 16 year old son and his wife.

Mr. Wilmar thanks God for having his estate and that he could achieve his dreams. He looks forward to seeing what opportunities his children will have because of what the farm has provided.

Tasting Notes: A great example of Huehue coffee. Very clean cup with the traditional winy floral versus complex malty tones, a little soft fruit tone in the medium roast range compliments the cup. Smooth and not too extreme, this is a cup anyone will love. Medium bodied with just a hint of winy acidity (a little brighter at light roasts, almost no acidity 2nd crack and beyond) this cup can be tailored to preference by roasting lighter or darker – a medium roast is a great start and smooth, darker roasts will increase strength but turn the malty factor bitter-sweet, lighter roasts have a little more soft fruit but also raw acidity.

Roasting Notes: This cup will roast a little two-toned. It is a custom lot, they put a couple different wet-processing chops together to create this specific cup profile, very tasty stuff but if shooting for a lighter roast, make sure everything gets through first crack.
