PERU FTO APESI coffee is sourced from family owned farms organized around Agraria de Productores Ecologicos San Ignacio LTDA (APESI), which was established in 2011 to support organic coffee producers in the region of Cajamarca, Peru. APESI provides training and financing aimed at improving coffee quality and yields to increase farmer earnings. Members of APESI are also investing in other businesses like honey production, fish farms, and citrus groves to diversify sources of income during the thin months when there is no income from coffee production.

Tasting Notes:
A very cool new offering. A bit lighter toned and a bit cleaner than out average Peru on the list. Medium acidity, gives a pretty sweet and floral first sip of this coffee, a bit of crispness and nice caramel malty type undertone. Turns a bit chocolaty into the darker roasts.

Roasting Notes:
We like this coffee at a light to medium roast. Try extending the roast at the light to medium roast points to build a little more body and undertones especially if you do not like acidity. Works great at darker roasts as well but so does the slightly cheaper Peru Norte on the list.
