Flavor Profile
Nutty/Malt • Lemon/Lime • Hint of Chocolate
A cool cup of Mexican coffee with unique (to Mexico) processing that leaves it far from the normal Mexican cup profile. Nice and sweet upfront with fruity aromatics, hints of more citric fruit in the cup especially at lighter roasts. Bakers chocolate, malt, smoke and a bit of nuttiness comprise the darker tones. Very dependent on roast, lighter roasts will be filled with more citric floral notes and a nutty dry chocolate undertone, medium roasts are balanced and bring out some hints of darker chocolate, with the acidity/floral tones greatly muted. Darker roasts pick up an almost barrel aged tones like you would find in beer or scotch and turn a bit smoky.

A Classic, Reliable Mexican Bean
A nice full city roast we thought to be the best. Works very nicely at the city to full city roasts level. Way dark tends to get a pretty funky twinge, we recommend the Washed Processed for into 2nd crack roasts.

Terruño Nayarita: “Homestead”
This coffee is from a committed group of 260 cooperative coffee farmers gathered around an extinct volcano, Cerro San Juan. The word ‘Terruño’ means ‘homestead,’ and these farmers take great pride in their coffee, which comes from heirloom trees. This is the top screen-size/grade from the Terruño Nayarita Co-op.
This is a co-op that holds a special place in our hearts. Our import partners at San Cristobal Coffee Importers take great care to find and produce excellent coffee, making sure farmers use safe, sustainable shade techniques and provide a fair wage to the workers.
