We found an awesome blowout from a friend of a friend on some exotic single estate Ecuador coffee. Only about 600 pounds of this Pacamara, get it while the getting is good.
This Pacamara is a smaller screen, the super large beans were screened out for a different chop. A very nice screen with beautiful processing but pretty normal sized.
Gilda is neighbors with Arnaud and got the strain (seeds) from him. Growing up at some even higher altitudes, a great coffee. Although all of these Ecuador’s are great, this one had 6 out of 8 scoring it a point higher than the others.
Gilda is also located on the outskirts of Tulipe de Pichincha, outside of the traditional coffee growing areas but in a spot that is perfect for the trees. Very high altitude (5000+ Ft) with less cloud cover than most areas around it.
Tasting Notes: Similar to the other cups but clearly more acidity. Pretty jazzy and heavy on the citrus floral tones especially at the lighter roasts balanced with those nice nutty/chocolate tones. Retains some brightness up to about 2nd crack. Crisp, clean, sweet, and medium bodied a prime example of what an Ecuador can be but mostly fitting those who like some acidity.
Roasting Notes: Great prep and easy to roast. Tasty before 2nd crack, from light to a strong medium roast; clean with great balance. Darker roasts turned a little plain, not hefty enough cup to retain into the darker roasts.
