Description
Coming from family-owned farms organized around Asociación de Productores Ecológicos de Planadas (ASOPEP), an organization operating within the municipality of Planadas in the department of Tolima, Colombia. On average, each producer cultivates coffee on 6 acres of land and relies on the income from coffee production for a living. ASOPEP is currently working on acquiring their fair trade certification as another way to support and open new opportunities for coffee producers in the region.
Tasting Notes:
A very cool lighter and sweeter Colombian cup. Tolima coffees are known for their more delicate notes and caramel/chocolate edge. Medium to low acidity, this cup does have a little more brightness than your standard Colombian but not enough to push away low acidity fans. Medium bodied with a cool balance between nuttiness and caramel tones with just a hint of a floral edge to it. A great everyday drinker!
Roasting Notes:
Easy to roast and tasty everywhere but extremes. Super light or super dark were not the best but anywhere in-between was a winning cup. Super light you get very front loaded brightness, super dark you get a bit too bitter and edgy. For most, a strong medium roast is a great start and a very balanced cup, can be tailored lighter or darker based on personal taste preference.
