A very clean jazzy Peru offering. This cup has awesome depth of flavor and is solid medium to dark roast coffee. Lighter roasts have some stronger lemony acidity, a bit of soft fruit, some herbal and a bit of nutty caramel with some lingering hints of a chocolaty undertone. Medium roasts  develop more of a chocolaty sweet tone with reduced acidity – hint of the nutty/caramel/soft fruit can still be found.  Darker roasts turn strong and edgy but retain good sweetness; mostly chocolaty with some smoke and toasty tones.

Rony Lavan is an ambitious and quality-driven cupper who has spent his career trying to carve out better and bolder coffees from small producers in Peru. While the country is emerging as a specialty market after many years of focusing on bigger lots and certifications, Rony’s passion is with identifying and developing the top scores and the best cups.

As president of the Lima Coffees exporting organization, Rony has already established himself as standing at the fore of microlot-quality coffees in Cajamarca. His first year with Lima Coffees, he entered the national competition and won; with the introduction of the Cup of Excellence competition to Peru in 2017, the country is poised to enter the international spotlight for its finest offerings. Rony and his coffees will be the ones to watch.

Tasting Notes: A very clean & jazzy Peru offering. This cup has awesome depth of flavor and is best medium to dark roasted. Lighter roasts have some stronger lemony floral acidity, some herbal, some fruit skin, and a bit of dry nutty, a stretch to caramel like but a couple folks noted it during our tastings. Good lighter but we though even better at a medium roast, developed more of a chocolaty sweet tone, fuller bodied, with reduced acidity & hints of spice. Lingering nutty/caramel tones in the aftertaste.  Darker roasts turn strong and edgy but retain good sweetness; mostly chocolaty with some smoke and toasty tones.

Roasting Notes: Easy to roast and good from light to dark. Not a high acidity coffee but if you roast it light, it will have some. Medium and darker roasts will be low acidity. Set-up helps get a smooth cup – day two really brought the cup together nicely.

    Just opened a pound and brewed the first pot. I take it to second crack and the result was a flavorful and smooth brew … really good!

    Been looking for something from Peru to match a “del norte” bean I haven’t found in a while. This one was great. I roast to medium and stop before any 2nd crack and cool quickly. I had ordered 2# in early Oct and quickly ordered another 5#. Easy to roast. Smooth cup.

    Roasted a batch last week and am about to order another 5 or 10 pounds. Very smooth and chocolatey with a darker roast.
