A lovely more fruit forward cup of coffee. Although an Indonesian, this tastes almost more like a stellar Anaerobic Central American coffee. Think Panama Natural or Dominican Natural. Delicate, sweet, fruity, floral with great balance.

Tasting Notes: To see these beans shine, keep them in the light-medium roast level. Will work darker roasted but will burn out many of the natural processed tones that make these beans a bit more expensive. Snazzy grape skin fruitiness reminiscent of the Panama coffees will be the first note to hit the tongue, lower acidity overall but will still have hints of citric at lighter roast points giving some floral highlights. Good fuller bodied cup light to dark; a sign of its Indonesian heritage. The darker tones are mostly chocolaty pulling a lovely balance with the fruitier aspects but one will also be able to see a little nuttier character as well.
Roasting Notes: We recommend a light to medium roast with extra setup time. Some of these trick natural processed coffees are best with a longer rest period before one drinks them, smooths out the cup and brings forth all the little cool tones that can easily get covered up by stronger tastes. Roasts a little two toned but still pretty easy to hit lighter roast points. High chaff, we would recommend a smaller batch size.
