Description
Kochere is a small area within the well-known Yirgacheffe coffee-growing region of Ethiopia. Located in the SNNPR (Southern Nations, Nationalities, and Peoples’ Region) of southern Ethiopia, Kochere is just south of the town of Yirgacheffe and is 250 miles southwest of Addis Ababa. The area contains washing stations where local farmers can bring their coffee for processing after it is harvested. The iron-rich acidic soil and high altitude of the region are ideal for growing specialty coffee and the Kochere district is known for producing some of the most lively Yirgacheffe coffees in the region.
Tasting Notes: A fairly neutral cup best from medium to dark roasts. Low acidity, medium bodied, a touch of sweetness. Lighter roasting shows some vegetal/spice characteristics, a little earthy chocolaty note and just a touch of floral. Medium roasts have a little chocolaty edge with some herbal spice. Darker roasts get smoky and full of bakers chocolate tones, roasty some would say. A bit edgier bringing some less neutral characteristics to the cup.
Roasting Notes: Easy to roast, medium chaff and fairly even roasting. Not being a super floral acidic Ethiopian medium to dark roasts will fit its cup character the best.
