A very fresh, feel good, sustainable, organically grown high rated Colombian. Who doesn’t like the sound of that! A bit higher acidity than standard Colombians, but will add some very positive taste attributes without being over the top like “high acidity” coffees themselves. We still put it in the medium to low acidity all together.
This traceable community blend with a vibrant regional profile comes from an association called Ecoterra SAS, which has 117 members with small farms in the Department of Nariño. This particular lot comes from select female producers/growers in the communities of la Union, San Pedro de Cartago, Arboleda and San Lorenzo, who have 1-acre farms.
Each producer has their own micro-mill where they carefully harvest cherries, depulp, ferment, wash and gently dry the parchment on raised beds. Imagine the harmony between these producers in farm management and post-harvest practices to achieve a clean and consistent blend. But also, just enough differences from farm to farm to create a rich complexity of flavors. An export company called Mastercol provides crucial logistical support for things like warehousing and milling coffee for export to the international market, which provides better income for everyone to reinvest in their farms and strengthen their families’ livelihoods.
Tasting Notes: Great from light to dark roasts. Lighter roast points are very jazzy with brighter features, citric mixing with a little sweet hint of a fruit tone, pulling some balance with a bit of nuttiness. Medium roasts get fuller bodied and smoother, slightly chocolaty with less crisp citric/floral tones than the lighter roast points. Darker roasts will kill most of the crisp acidity but will retain a little hint of fruit as the cup cools. Much more chocolaty and robust at the darker roast points.
Roasting Notes: Pretty even roasting, medium to low chaff, a very versatile bean in the roaster. Good from light to dark but most will like a solid medium roast the best, good balance and smooth edges. Light roasts are equally as tasty but a little more on the acidic side, darker roasts are a much stronger cup and pick up some roasty tones but it compliments the cup nicely.
