A nice clean cup tasty from light to dark. Good body with a pronounced toasted walnut and baker’s chocolate undertone. A bit of acidity upfront at lighter roasts gives some stronger floral and slightly fruity contrast to the classic Colombian profile, smoother and more delicate than darker roasts.

Medium to dark roasts mute up a lot of the brighter & fruitier cup tones but will leave a nice and sweet edge to the stronger nutty and chocolaty dark tones. Wonderful layers of complexity to the fuller bodied more robust cup.

A beautiful new co-op arrival, certified FTO and clean as a whistle. Great cup from light to dark.

This coffee is sourced from family-owned farms organized around Cooperativa del Sur del Cauca (COSURCA), which operates within the department of Cauca, Colombia. COSURCA is an umbrella cooperative that works with 11 community cooperatives in 10 municipalities throughout Cauca.

COSURCA operates a centrally located dry mill facility and cupping lab where coffee is received, processed and selected for export. In addition to marketing coffee internationally, COSURCA provides producers with financing, training, and technical assistance to improve coffee quality. COSURCA also strives to improve the quality of life for coffee producers and their families through projects promoting income diversification and education.

For example, COSURCA has a facility to produce fruit juice for national consumption using fruit cultivated by the same group of coffee producers. COSURCA also has a healthy kitchen program that provides funding for kitchen renovation for coffee producers.

Roasting Notes: An easy to roast coffee. Avoid light roasts if you do not like a little acidity. A full city roast really bring forth the baker’s chocolate undertones which many will love, a nice medium roast though has the best balance and was our favorite roast point, easily clean enough to hold lighter roasts, but will produce a much sharper more floral/fruity/nutty cup. Extra setup time can help pop out the wonderful little complexities and reduce a little sour acidity if too much upon first taste.
