A nice clean cup tasty from light to dark. Our favorite was a medium roast, but use your personal preference for a good roast level to start with. Fuller bodied with a pronounced toasted walnut and baker’s chocolate undertone. Lighter roasts have a bit of acidity upfront, giving it some citric/floral balance to the classic Colombian nuttiness, smoother cup and more delicate at lighter roasts. Darker roasts produce a far less citric/floral cup with much stronger darker tones and a fuller body. H
ints of caramel as the cup cools if you shoot in the medium roast range.

A beautiful new co-op arrival, certified FTO and clean as a whistle. Great cup from light to dark.

This coffee is sourced from family-owned farms organized around Asociación de Mujeres Caficultoras del Cauca (AMUCC), a producer association with 274 women who live within the municipalities of Balboa, Cajibio, Caldono, El Tambo, Florencia, La sierra, La Vega, Morales, Piendamo, Popayan, and Timbio in the department of Cauca, Colombia. The average age of AMUCC members is 40 years old and each member is the head of her household. AMUCC coordinates with Expocafé (an exporter dedicated to supporting coffee cooperatives) to improve coffee quality and increase access to international markets for women who produce coffee.

Roasting Notes: An easy to roast coffee. Avoid light roasts if you do not like a little acidity. A full city roast really bring forth the baker’s chocolate undertones which many will love, a nice medium roast though has the best balance and was our favorite roast point, easily clean enough to hold lighter roasts, but will produce a much sharper more floral/fruity/nutty cup. Extra setup time can help pop out the wonderful little complexities and reduce a little sour acidity if too much upon first taste.
