Decaffeinated Colombian Royal Select MWP

Produced with premium certified organic beans with good physical preparation, and potential to express excellently once decaffeinated. During the water process, the green coffee is pre-soaked in water to expand the beans for caffeine extraction. The hydrated green coffee is then introduced to a unique solution of concentrated coffee solubles that draw out the caffeine while minimizing the loss of flavor compounds. Once the caffeine has been removed the green coffee is re-dried and re-bagged for transport, and the extract solution is filtered of its caffeine and recycled to be used again.

Tasting Notes: 
A very nicely balanced chocolaty and nutty cup profile, a bit on the sweeter side.  The taste is fuller bodied with a nice walnut chocolaty tone mixing with a smooth, sweeter, mellow finish.  Pleasing hints of smoke and spice finish off this great Colombian coffee at darker roast points. Lighter roasts can show hints of floral but all in all a lower acidity cup.

Roasting Notes:
Like all Colombians this is a versatile bean for roasting.  Darker roasts convey wonderful smoky tones and outstanding sweetness while lighter roasts (with decaf, avoid cinnamon roast points) will deliver a crisper cup.  A great coffee to experiment with at different roasting points to experience all this coffee has to offer.

Decaffeinated Ethiopian Sidamo 4 – Natural Processed – Royal Select MWP

Decaf Ethiopia Sidamo 4 Natural Royal Select Water Process is curated from lots that the Royal team has selected based on cup profile, physical preparation, and potential to express excellently once decaffeinated. During the water process, the green coffee is pre-soaked in water to expand the beans for caffeine extraction. The hydrated green coffee is then introduced to a unique solution of concentrated coffee solubles that draw out the caffeine while minimizing the loss of flavor compounds. Once the caffeine has been removed the green coffee is re-dried and re-bagged for transport, and the extract solution is filtered of its caffeine and recycled to be used again.

Tasting Notes: Shines at the fuller roast levels but was still interesting lighter roasted. Good body, lower acidity with nice chocolate and tea like spice tones.  Some good sweetness from its natural processing, a small hint of soft fruit as the cup cools. Reminds us of a less fruity Yemen coffee. Rustic chocolate, tea like spice, lower acidity and fuller bodied.

Roasting Notes: Being a gr. 4 Ethiopian, these beans are closer to a Harrar or Yemen style coffee. Smaller screens, slightly uneven roasting, but will produce a tasty treat in the cup. SWP beans appear a bit darker than they really are. Make sure to get at least a little development after “most” of first crack to ensure a tasty cup. Medium and dark roasts are nice and easy roast points to hit with it, a little sheen for a medium, signs of second crack or a hint of oil to mark the darker roasts.

Decaffeinated Org. Mexican Huatusco Royal Select MWP

During the harvest, each producer processes coffee with their own micro-mill and dries the coffee in the sun on patios before transporting the coffee in parchment to a centrally located warehouse where the coffee is milled and then sent for decaffeination.

This lot was decaffeinated using water process, which means green coffee is pre-soaked in water to expand the beans for caffeine extraction. The hydrated green coffee is then introduced to a unique solution of concentrated coffee solubles that draw out the caffeine while minimizing the loss of flavor compounds. Once the caffeine has been removed the green coffee is re-dried and re-bagged for transport, and the extract solution is filtered of its caffeine and recycled to be used again.

A great fresh arrival, Mexican beans always make a nice decaf, a bit neutral but lovely chocolaty and nutty tones. Best medium to dark. Good as a single origin drinking but also works decent for a blend base for those playing with espresso or contrast blends.

Tasting Notes:  A very nice light to dark roast decaf. Lighter roasts are sweeter and more delicate, a little unique spice with a bit of nuttiness and just a pinch of floral. Medium roasts are a smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Lower acidity and fuller bodied, pretty hefty in its semi sweet bakers chocolate tone at fuller roasts.

Roasting Notes: An easy cup to roast, right around second crack is a good starting point for a more robust chocolaty cup. Hold up lighter as well, more delicate cup in the light-medium roast range if the fuller roasts are too hefty. Very low chaff and fairly even roasting. A couple extra day setup time helps reduce any sour or floral tones if shooting for the lighter roasting points.

    I don’t drink decaf but roast it sometimes for a friend. I bought a different decaf, did not care for it (though my friend liked it) and decided to try this sampler pack. I often like to blend beans (after roasting separately) and found that when I combined these in equal parts and brewed it, I actually liked it. It’s not quite like my favorites but if I were really wanting a decaf, I would definitely drink this.

    I drink decaf every evening. People think decaf tastes different and is somehow inferior, but this set is amazing. It’s even better when you roast them all and blend them together. The Sumatra is great City+ with the others light.
