A great classic Dominican cup with a bit more islandy acidity than we’ve seen in the past. A stronger, fuller bodied cup with a lot of complex darker tones and a slight balance of islandy floral tones. Chocolate, tobacco earthiness, molasses are some of the first tones to hit the tongue and fade into a sweeter floral tone that strikes a bit of that nice islandy characteristic.

A very cool Co-op production ML coffee from Cafe Kreyol (our Haitian Co-op friends).

Cafe Kreyol goes into some of the most impoverished and troubled areas that are within prime coffee growing territory, organizes farmers, teaches how to correctly process beans, guarantees purchase of the beans at way above market prices ensuring it goes directly to the farmers and strives to really turn around some of the more troubled areas, putting people to work at well above average wages and ensuring future livelihoods.

Joey, the head of Cafe Kreyol, even strives for his US employees the above statement. He finds the hardest working individuals with great work ethics that for one reason or another have really been put down with employment and troubled times to help them recover and build a resume while also being able to help others.

One can feel really good about supporting any of Cafe Kreyol’s projects and for the most part – really tasty coffees as well.

Cafe Kreyol projects including this one are project coffees, these are not a 0 defect beautiful large screen coffee. It takes around 5-7 years to really turn out a prime coffee operation and most of these are on year 2-3. Great tasting cups but keep in mind – not the world’s best screen.

Barahona is a state and city in the Dominican Republic and the surrounding area is where most of the renowned coffee comes from.

Good altitude and soil conditions really bring out a bit more of an islandy characteristic than the other Haitian and Dominican coffees.

Roasting Notes:
A really nice medium to dark roast coffee. A bit underdeveloped tasting at lighter roasts. Traditionally in the Dominican, they roast pretty dark and the coffee will have decently above average complexity at the darker roast but it will also mute up a bit of that islandy acidity that makes this way cool in my mind. I shoot for a full city roast – good strength and retains a little bit more sweetness and crispness.
