Best from a medium to dark roast; big bodied, low acidity with stronger more toasted nutty/chocolaty character. Smooth and rich cup, on the stronger, semi-sweet side of Colombian coffees. Classically toned as some would say.  If you touch or go into second crack, one does get some complimenting roasty and smoky tones that turn the cup more chocolaty than nutty. Before 2nd crack, more nutty than chocolaty.

Description

This is a very fresh & tasty Supremo (large bean screen).

In Colombia the vast majority of coffee is cultivated, harvested and processed on small family owned farms. While these producers are their own architects, designing farm management and post-harvest solutions to fit their environment, they also need strong alliances to bring their coffee to the international market and earn fair prices. To support this system of small farm production, Colombia established the Federación Nacional de Cafeteros de Colombia (FNC) to organize and support a complex network of larger regional coffee cooperatives.

These cooperatives provide producers with valuable logistical support like centralized warehouses to store dried parchment and dry mills where the coffee is prepared for export according to size and quality.

Tasting Notes:

Roasting Notes: 
An easy to roast coffee good from a medium roast to as dark as you want to go. Light roasts come off a little grassy and under developed but as you creep towards a medium roast you get very nice classic Colombian toasted walnut and spice with a slightly chocolaty finish.

    “Tasting Notes” are spot on as to flavor. Really enjoyed it at around City+. Very approachable for any coffee drinker. At $4.79/lb, this is about as perfect a daily drinker as you can get.

    There are 3 things I like about this coffee; the price, the flavor, and the price. I have also roasted mine to just before the second crack. My wife and I love the flavor, it reminds of our favorite donut shop coffee, except better.

    I’ve been roasting my way through 10 lbs. of this bean. Time to order another #10! I go dark roast and get sweet, caramel, chocolate flavors with very low acidity. Crema is thick and sweet. I have experimented with most of the worlds coffees and keep coming back to this bean! This bean also pairs very well with dark chocolate!

    The Supremo I received was very winey, roasted to clearing first crack. It didnt really suit my tastes so I threw it in a blend. Roasting it to 15 seconds into second crack was excellent. Still had that winey taste but a lot more sweet chocolate. This was VERY easy to roast, very audible cracks and evenly colored.

    Roasted to 2 crack. Very pleased with the taste. It’s like the snickers of coffee. Chocolate. Nutty. Very clean coffee bean. Not a lot of chaffe.

    Nice but not memorable. But I only roasted it just past first crack. Light acid drying on first and last swish. Medium mouthfeel, not creamy, with a hint of maltiness mid-palate. Good enough for daily wake-up drink but would use something else for guests if wanting to impress.

      Thanks for the review! We find it best medium to dark roasted. Will hold a light roast but as stated, a little more plain and can pull some herbal/grassy if too light. Medium to dark roast one will build more body in the cup and accentuate the darker malty/chocolaty/nutty. A clean and classic tasting Colombian. We do stock much jazzier light roast Colombians but they often are in a different price tier and often fruitier with hybrid processing techniques.
