Coming from family farms organized through Cooperativa Café Timor (CCT) and is sourced from the regions of Ainaro, Ermera, and Liquiçá, grown at 800–1600 masl and washed then dried on raised beds. The listed variety is Timor Hybrid a naturally occurring Arabica × Robusta cross first identified in Timor in the 1920s, widely known for its rust resistance used in many Arabica breeding lines. In the cup it’s sweet, comforting, and clean, led by plum over a base of almond, caramel, and chocolate, with a smooth, well-rounded profile and gentle sweetness rather than sharp acidity.
