A beautiful cup at the lighter roast points. Mild mannered and very delicate comparatively to many naturals, no over ferment here. Which is part of the crazy high rating on these beans. Crystal clean at lighter roasts, fruit forward but not over the top. A bit lower acidity cup that pulls a great balance between the light and dark tones. Great winey, floral and stone fruit notes upfront balancing with a hint of a malty and/or chocolaty undertone, hints of nuttiness is the aftertaste. Incredibly smooth and well defined cup at lighter than normal roast levels is what puts these beans into a category of its own.

This Guatemalan is a washed processed and sun-dried green coffee that combines production from different regions and departments of Guatemala (harvested between October and February), aiming for a classic and consistent profile. It comes from areas with volcanic soils and an average altitude of around 1,372 meters above sea level, which typically produces firmer and more stable beans for roasting. An interesting aspect is the micro-processing approach: many producers (often in indigenous communities) process their own harvest on small farms, controlling cherry selection, pulping, fermentation, and drying. They then organize themselves into cooperatives to store and transport the parchment coffee for export through Guatemala City, in addition to accessing technical assistance and practices such as reusing byproducts (pulp) for fertilizer.
