Alejandro Solis’ unshakable drive to renovate Finca Huixoc might come from his responsibility to preserve and improve upon what his grandfather left him. But it seems evident that he feels even more of a responsibility to the families who have worked on the estate alongside his family over the generations.
Alejandro has the demeanor of a university professor and he takes an academic approach to cultivating coffee in search of solutions to the impacts of climate change that go way beyond the traditions passed down from his grandfather who established the 270-acre estate in the 1940’s. There is a culture of learning on the estates that goes beyond the classroom. Anacafé (Guatemala’s National Coffee organization) has open access for conducting research on the estate. Alejandro also makes a point of having monthly seminars on conservation so that the families working and living around the estate can actively participate in protecting their natural resources.
Tasting Notes: Best at a medium to dark roast, this cup brings out the classic smoky and malty tones of the Huehue region. A little sweetness upfront and pretty low acidity, will make fuller roast fans real happy. Lighter roasts work but can come off a little grassy upfront, which develops into lovely smoky and malty tones at the darker roast points.
Roasting Notes: Easy to roast but avoid the lighter roast points. Medium to as dark as you want to go. Setup will help smooth it out if you like more of a creamy cup.
