Very fresh new crop! First arrival of the new season!
This Mexico Altura is sourced from the southern states of Chiapas and Oaxaca, Mexico, where there are mountain ranges that provide higher altitudes and ideal climates for cultivating coffee. The vast majority of farms are family-owned with less than 10 acres of land. The coffee harvest typically begins in October and ends in March.
Roasting Notes: Very fresh new crop! First arrival of the new season!
Good from light to dark, but you need at least a little development past first crack for a winning cup. Lighter roasts will have a little lemony floral tone upfront with more nutty/caramel like tones in the cup. If you nail it a little too light, can have a little grassy, but mostly if you detect this, a little extra setup will clean it up. Medium to dark roasts are error proof, pretty lovely cup anywhere in this ballpark. Low acidity, medium bodied with a sweet edge. Still a chance of a caramel spin before 2nd crack but quickly gets dominated by much more robust chocolaty tones as you push the roast darker. For dark roast fans, a great find. Darker roasts promote a fuller body and the smoky and roasty tones compliment the more nutty/chocolaty cup, retains its sweet edge.
Tasting Notes: Great from light to dark but we recommend starting more in the medium roast range, tailoring it based on personal taste preference. Will roast slightly two toned but still considered an easy bean to roast. The lighter you roast, the longer we recommend giving the setup before you drink. Medium to low chaff.

Made two batches. One was medium and another – medium dark. It was disappointing. Pretty crappy bean even for this price.
