A wonderful decaf! We recommend a medium to dark roast on these beans. Sweet edged and malty, good body and lower acidity. Medium roasts can show a little hint of soft fruit and nuttiness, darker roasts will get pretty bold with a roasty finish. Lighter roasts can show just a hint of grassy but will still make an interesting cup with more fruit, nuttiness and sweetness to go along with it.

Description

Our friend Edwin from Finca Vista Hermosa has produced an awesome traceable decaf blend from small holders is his neck of the woods. Awesome tastes, fully traceable and produced with sustainability in mind, unlike most other even premium decafs out on the market.

For three generations we’ve grown coffee in the highlands of Huehuetenango, and in the past twenty years we’ve grown to partner with other producing families, cooperatives and associations across Guatemala. Our mission is connecting these beautiful families and their coffees with roasters around the world. A sustainable sourcing approach is similar to our strategy as farmers and sellers: everything has a home. From the 88+ COE submissions to the 82 point mill-outs and last picks sold to local consolidators, there’s value. Our intention with Alma involves sourcing bright, fruited coffees of 84.5+ quality– coffees with a lot of soul — with our vendor partners from Huehue to Jalapa

Our QC team based in Guatemala is meticulously selecting for a consistent, clean, and lightly fruity blend. La Alma means the Soul, and we hope this blend will be the vitality and warmth of your espresso or house coffee. For every pound of Alma sold, $0.05 goes directly to our partners at Habitat for Humanity Guatemala to support their Smokeless Stove Program. These clean stoves impact families for decades by increasing indoor air quality and wood-fuel efficiency, while decreasing cooking time. From the 2021 crop Alma sales alone, 42 families were able to receive a new stove. In the future, we plan to invest in home-building origin trips with volunteers from every link in the coffee value chain.

The Swiss Water® Process uses pure green coffee extract and proprietary carbon technology to remove caffeine from  green coffee beans. Swiss Water® has specified the pore size of the carbon to match the caffeine molecule to ensure only the caffeine is trapped when the caffeine is captured from the green coffee extract. The Swiss Water® Process is certified organic and 100% chemical free.

Roasting Notes: A nice easy to roast decaf. We thought a medium roast fit it best but some will like it a little lighter, or darker. Watch for the expansion in bean size (1st crack), give it a little time to darker 1-2 shades and cool it out. Decafs can look a little darker then they are. Any signs of a shiny surface, would cool it out right away.
