Description
Although this coffee has fermentation in the name, this is not an overly fermented fruity coffee. A very clean and highly rated traditional tasting Colombian. One will notice semi-exotic for Colombian characteristics of above average sweetness with hints of floral at lighter roast points; more chocolate like than nutty base tones.
This single-variety lot comes from a group of 50 producers located in the South of Huila. The Colombia variety is the result of a project of Cenicafe in Colombia to cross Caturra and Hybrido de Timor and create a rust-resistant variety, which has been widely cultivated since the early 1980s. Despite leaf-rust mutations and the emergence of Castillo as an appealing alternative, Variedad Colombia remains one of the most commonly grown cultivars in Colombia, offering excellent cup quality when grown in ideal conditions and carefully processed.
The double fermentation process involves an initial fermentation in cherry, followed by traditional pulping and a second, usually longer period of fermentation in tanks before the coffee is then sun-dried on patios or parabolic driers.
Tasting Notes: A crisp, clean and semi-exotic Colombian! Great at light to medium roasts but works light to dark. Light roasts themselves are fuller bodied and pull good balance between a sweet citric/floral upfront and a semi-sweet rustic chocolate undertone, hints of nuttiness in the aftertaste. Great mouthfeel at the lighter roasts and clean tastes. Medium roasts turn the cup more chocolaty and robust. A hint of buzzy acidity in the medium roast range but hardly citric, great depth to the darker toned cup. Would consider it a smooth and rich cup until one hits the darker roast points. Dark roasts are smoky and roasty but very chocolaty and semi-sweet.
Roasting Notes: An easy roasting coffee, medium chaff levels and even roasting. If you have a “default” roast, start there, otherwise we though it was best showcased closer to 1st crack then 2nd. A longer setup producers a richer, smoother cup, but turns simpler tasting if you wait too long.
