A very nice non-traditional Brazilian cup. Very chocolaty, almost milk chocolate-like tones in the medium roast ballpark. Low acidity, only hints at the light roasts accompanied with some floral aromatics. A little bit of a sweeter edge to the cup pushes it towards milk chocolate instead of bakers chocolate tones but all in all, not an overly sweet cup of coffee. Dark roasts get a bit edgier and introduce some smoky tones into the cup but push it into the fuller bodied category.

Description

New 2017/18 crop!

This Brazil is coming from Fazenda Santa Clara, a 130-acre farm located in the municipality of Andradas within the state of Minas Gerais, Brazil. Santa Clara was founded by the Bassi family, an Italian immigrant family in 1930. The land was initially used to farm grapes and years later it was transformed to farm coffee.

Since 1999, management of Fazenda Santa Clara has been passed down to Paulo Teixeira Giordani. Paulo decided to convert the farm to an organic coffee farm. Paulo is an agronomist and is using his coffee knowledge to implement organic and biodynamic practices to improve the quality and high yield production of coffee at Fazenda Santa Clara. His success in the production of organic coffee has made Paulo a promoter of the organic movement of coffee production and as a result a coffee expert in Andradas. Fazenda Santa Clara has served as an inspiration for local farmers who can learn from the success of an organic and high production farm.

Tasting notes:

Roasting Notes:
Medium to dark roast beans and very easy to roast. A medium roast was preferred around here. The smooth and semi-sweet chocolaty tones were fantastic. Dark roast fans will think it to be a little mild at a medium roast and should take it into 2nd crack.
