Description
New 2017/18 Crop! First awesome Yirg arrival of the new season!
This cup is sourced from 700 family owned farms located within the Gedeb District in the Gedeo Zone, Southern Nations, Nationalities, and Peoples’ Region, Ethiopia. 700 coffee farmers deliver ripe cherries to the Alemu Bukato’s washing station where they are carefully sorted, depulped, fermented, washed, and then placed on raised beds designed to ensure proper air circulation and temperature control for an optimal drying process. Coffee is turned regularly on the beds to prevent damage during the drying process. Coffee is stored in a local warehouse after the moisture is reduced to between 11.5 and 12 percent. Then the beans are transported to Addis Ababa, the capital of Ethiopia, to be milled and bagged prior to export.
Tasting Notes:
Classic and super clean washed Yirg profile. Higher acidity with some pretty strong acidity and floral tones at the lighter roast points. The acidity mixing with a bit of a fruit tones almost gives it a tropical note in the taste. Great balance and very tasty from light to dark.
Roasting Notes:
This cup is really shooting for your lighter roast Ethiopian fans. Crazy complex and bright but no underdeveloped tones; will be pretty acidic though. Medium roast smooths it out but is no less exotic, goes from a more lemony acidity to defined peach like notes. Dark roast brings out this more chocolate and spice cup profile with just a hint of a fruity factor.
