A awesome and super clean Burundi coffee. A bit of lemony floral acidity upfront with a little soft fruit tone balancing with a smooth and rich chocolaty spice note. Small hints of an herbal/tea like tone in the aftertaste letting you know its an African coffee. A bit sizzling but holds lighter roasts nicely. Smooth and a bit sweet at a medium roast, much heftier into the darker roast, turning it into a strong and fuller bodied cup. A great African cup and not too acidic, one almost everyone will like.

Description

Coming from family-owned farms organized around the Coffee Processing Company (CPC), which was established in 2010 by Salum Ramadhan who was born and raised in the Kayanza province, Burundi.

Salum operates 4 washing stations in Kayanza. All four stations reflect Salum’s passion for coffee and his commitment to his community. Lots are meticulously separated fully traceable to harvest date and washing station.

Each lot is classified through a strict protocol that includes hand sorting and floating the cherry to insure premium lots.

Salum pays well above the government minimum for cherry and pays farmers extra to sort cherry. He also encourages the farmers keep and process unused cherry for personal consumption or to sell in the local market. Salum has a nursery program to distribute seedlings to farmers. He has also been paying to build additional classroom to alleviate problems with overcrowding in the schools.

Roasting Notes: Easy to roast, would avoid real light roasts if you do not like acidity but easily clean enough to roast light. Medium roasts were wonderful  being delicate and a smooth cup. Darker roasts produced some great African tones with a strong bakers chocolate note, toasty notes complimented the cup.
