Description
Panama is an origin that constantly makes headlines in the specialty coffee world mostly for the astounding auction prices in each year’s Best of Panama cupping competition. We are pleased to make some hullabaloo of our own with the arrival of the Howling Monkey Natural Geisha from Hacienda Bajo Mono, a 75-acre estate in the famed Boquete growing region nestled under the ecological wonderland of Volcan Buru National Park where over 550 species of birds make their home. Ripe cherries for this natural processed coffee were carefully hand sorted and floated to remove less dense and damaged coffee beans, and then expertly dried on raised beds for up to 20 days.
Tasting Notes: A very cool cup for you natural processed fans. Lighter roasts show some good citric acidity fading quickly into delicate red-fruit notes balanced with a tea like chocolaty factor. As one pushes it into the more “medium” roast ballpark, the acidity reduces a bit and creates a more pronounced sweet spice note with fruity overtones. A little hint of caramel can be found in the medium roast level. Dark roasts are not recommended.
Roasting Notes: This is a lighter roast coffee to see it shine. Right after first crack can be just a hint grassy, especially if you do not let it setup for 1-3 days. Personally we though just a shade darker after 1st crack, bordering a city to city+ roast matched it perfectly. A bit higher chaff but an awesome screen of coffee and all in all, easy to roast.
