Brazil Matas de Minas – Raimundo Martins – Yellow Catuai Natural
A beautiful single-origin drinking Brazil. Clean, rich and balanced; this is a cup we are happy to drink all day long! Lighter roasts show a sweet edge, good floral acidity, a little natural-processed soft fruit tone that balances with classic Brazil nutty and dry-chocolate hints. Medium roasts drop some of the acidity but retain a hint of the fruity factor. The body gets thicker and those nutty and chocolaty tones take over the bulk of the cup. Darker roasts get a little edgy and smoky with more bakers chocolate and a lingering nuttiness. This cup shines at the light to medium roast level.
Brazil Mogiana Guaxupé 17/18 FC SS
A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.
Brazil Premium Cerrado Mineiro – Fazenda Dois Irmãos – Mundo Novo Natural
A very tasty cup, we seldom see single strains of Mundo Novo but after this cup, we will pay a little more attention to them. Fuller bodied and lower acidity cup in general but lighter roasts so have a bit of jazzy citric/floral acidity and soft fruit, on the sweeter side but they fade pretty quickly into more dry nutty and chocolaty semi-sweet undertones. Medium roasts we though shined best, much lower on the acidity scale; smooth and more creamy, almost a candied floral upfront but fades on the tongue pretty quickly to those semi-sweet nutty/chocolaty tones. Darker roasts are strong and far less sweet, tastes a little more like a standard Brazil, dark was our least favorite roast point but still very drinkable more bakers chocolate like with stronger smokiness. A bit of that traditional Brazil nuttiness holds on in the aftertaste clearly identifying the terroir of Brazil.
Brazil Premium Mantiqueira De Minas – Sitio Vital – Red Catuai Natural
A fun and more wild Brazil coffee. This lot was slow dried, bringing a nice complex semi-sweet red fruit tone to front end of the cup; very reminiscent of Cascara if you have had that before. A little hint of acidity at the lighter roast points makes the cup really pop, a lemony floral crispness, balancing with a more oaky/nutty undertone with that cascara accent. Smooth cup a bit more on the neutral side. Medium to dark roast accentuate the body of the cup, making it a little more milky, the fruitiness/acidity roasts out of the beans pretty quickly and the tastes move towards the chocolaty smoky end of things, a little oak hint in the aftertaste coming from that slow dry process. Gets a bit “roasty” as you approach 2nd crack but its a compliment, really adds some nice depth with the more oaky chocolaty feature set.
