Our third batch of Brazil Bahia, a lovely small production Brazilian. This lot 3 is less fruit forward than previous batches. Hints of soft fruit as the cup cool, but mostly about the rich and sweet nutty and chocolaty tones.

Great from light to dark.  A pinch of fruity acidity comingles with nutty and chocolate like tones, good mouthfeel and fuller bodied. Light roasts come off a bit more fruit forward and nutty, has a very sweet edge with a bit of a boozy finish, medium to dark roasts show a much creamier cup showcasing the nutty and chocolate tones with far less detectable fruitiness. Lower acidity and clean as a whistle make this cup a wonderful daily drinker. A very sweet cup, coming from the seeds having a longer time in the ripe cherries before processing, also provides the hint of red fruit as the cup cools. Great depth of flavors, this batch is a cup every Brazilian fan will love.

Description

Our third batch of Brazil Bahia, a lovely small production Brazilian. This lot 3 is less fruit forward than previous batches. Hints of soft fruit as the cup cool, but mostly about the rich and sweet nutty and chocolaty tones.

Tropical Bahia is a product of unique circumstances. Producers based in the highest elevations in state of Bahia have some of the best coffee cultivation conditions in Brazil but often encounter problems with drying due to high humidity and rainfall during the harvest and processing season. For this reason many choose to transport their cherries around 50km to the neighboring Caatinga biome, known for its warmer, drier climate. En route, the cherries undergo a unique fermentation process in a closed truck. The process never lasts more than 24 hours, but the resulting cup profile is packed with fruity sweetness.

Roasting Notes:
Slow dried natural processed coffee roast a bit uneven and this coffee is no exception. High chaff with 2-3 colors of beans in the end product. Still fairly easy to roast, for tasted good at most roast levels. Try to shoot for a medium roast to start and lighten or darken your roast based on your personal taste preference. Roasting a bit slower can help even out the roasting a bit and produce a bit smoother of a cup. A longer setup time bring greater depth of flavors to the cup.

    very fruity and chocolaty at medium roast. not your typical brazil but very tasty. love it.

    Heat gun roasted 1lb 13min until shortly before first crack ended. Brewed in aeropress 15 hours later. Results is magnificent. A bright complex cup filled with tones and nuances far beyond the description. Sorry I only bought two pounds.
