Very clean cup for a Sumatra – it gets really smooth and chocolaty at the right roast (strong medium) even has a sweet edge and minimal earthiness. Darker roasts are more traditional with Indo coffees but it will get much edgier and smokier accentuating the earthy factor. A big strong prime example of a classic Indonesian Sumatra coffee, prep is on the rougher side but cups very clean and smooth. Very thick, creamy and chocolaty at a strong medium to dark roasts.

Description

This Sumatra Org. Mandheling coffee is sourced from family-owned farms located in North Sumatra Province. The coffee is wet-hulled, a uniquely Indonesian processing method in which the coffee parchment is removed before the final drying is completed, producing a hallmark Indonesian flavor.

This is an ugly duckling coffee like many Sumatra coffees. The wet-hulling and cherry collection methods do not look at pretty as American or African beans. They will ploom into beautiful swans after roasting, be assured. The terroir of Indo coffees represented in these beans. Thick and creamy with complex earthy dark tones; similar to a scotch or other barrel aged liquors. On the chocolaty side with hints of smoke and pete.

Good at a variety of roasts, medium to dark. Beans will roast uneven – I tend to judge Indo’s by the 2nd crack. Touching 2nd crack will be a medium roast. Just a slight hint of smoke in the cup. You can go a shade lighter for a little smoother cup without the smoke note but risk a grassy cup if you get too light. For dark roast fans, push it just 10-20 second into the 2nd crack. Roasting at lower temps for longer is nice with this coffee.
