Wow, we did not know coffee could taste like this. Some will absolutely love this coffee, others, will think it interesting but too different. Any which way, this cup will astonish any coffee fan and for many, it will be an incredibly tasty treat. Coffee that tastes and smells like pineapple! 

The cherries for this lot, grown on Finca La Luisa in Antioquia, underwent anaerobic fermentation in a CO2-flushed stainless steel tank for 120 hours.

The juice from the coffee pulp recovered in this process is mixed with pineapple juice, the coffee is depulped and everything is returned to fermentation tank. This second process takes another 3 days, after which the coffee is laid out to dry on raised beds.

Tasting Notes: What a tasty treat, this one was a bit different than the others. Fruity but not crazy hit you over the head. The pineapple tones are mellow, half the tasters still picked them right out but was a stretch for the other half. The cup does have some stronger citric acidity and brighter characteristics, a little lemongrass up front, a hint of red fruit if you can get past the stronger grape tones, will finish a bit of classic Colombian nuttiness, a little more chocolaty if you push the roast a little, but careful, this is the most delicate of the fruit ferment too dark and one starts to lose the pineapple tones that this cup is all about.

In the blind tasting, this was the hardest to tell, one heck of a tasty cup but only half of the folks picked out pineapple. It was however, the most picked for the favorite one, not only by our crew, but by the producers as well. Not that crazy grape or orange is bad, but this one grooves with the coffee tones better.

Roasting Notes:
Keep this on the lighter side and expect something unique and different. Nobody has tasted coffee like this before. Higher chaff, pretty even roasting, lovely screen of coffee. The trick here is to keep it on the lighter roast side. Not a cup for you dark roast fans. Fruity, floral, sweet and pineapple like. Definitely new wave lighter roast crazy coffee. 24-48 hour setup recommended, some may even want to wait 3-5 days, a little sharper still after 24 hours. Make sure you get through first crack! The pineapple will be there no matter what but if you do not hit 1st crack, it will be balanced with more grassy and vegetal tones instead of classic Colombian nutty and chocolaty.
