We did not know coffee could taste like this. Some will absolutely love this coffee, others, will think it interesting but too different. Any which way, this cup will astonish any coffee fan and for many, it will be an incredibly tasty treat. Coffee that tastes and smells like candied grape. I know we have used “grape or grape skin” descriptors for coffee before, but that was before we tried this coffee.

How do they do this? Basically the coffee is fermented with grapes and grape juice, with some wine yeast to help it take in the beans. Similar to an anaerobic honey processed coffee, but instead of water, they use grape juice and whole grapes.

This distinctive lot from the Buenos Aires farm near Pijao village in the Quindio department is the product of innovative, painstaking processing techniques that produce a unique and memorably fruity cup. This coffee was exposed to a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage, mashed fresh grapes and wine yeast were added. The cherries were then pulped and placed to dry on raised beds with mashed fresh grapes placed amongst the coffee until the ideal moisture content was achieved.

Tasting Notes: Grape, grape and more grape! The green smells like grape, the roasted beans smell like grapes, and the first taste to hit the tongue, will be grape. The cup does have some stronger citric acidity and brighter characteristics, a little lemongrass up front, a hint of red fruit if you can get past the stronger grape tones, will finish a bit of classic Colombian nuttiness, a little more chocolaty if you push the roast a little, but careful, too dark and one starts to lose the grape tones that this cup is all about.

In the blind tasting, everyone picked this one as grape, no misidentifying this cup.

Roasting Notes:
Keep this on the lighter side and expect something unique and different. Nobody has tasted coffee like this before. Higher chaff, pretty even roasting, lovely screen of coffee. The trick here is to keep it on the lighter roast side. Not a cup for you dark roast fans. Fruity, floral, sweet and grape like. Definitely new wave lighter roast crazy coffee. 24-48 hour setup recommended, some may even want to wait 3-5 days, a little sharper still after 24 hours. Make sure you get through first crack! The grape will be there no matter what but if you do not hit 1st crack, it will be balanced with more grassy and vegetal tones instead of classic Colombian nutty and chocolaty.
