Description
Coming from Finca Los Caballitos, a 300-acre farm located in the municipality of San Gaspar Chajul within the department of Quiche, Guatemala. A lessor known but super tasty growing region. Also called the Ixil Triangle because of the beautiful landscapes and the preservation of the indigenous culture.
In 2005, Oscar and Christian Schaps, who are brother, purchased Finca Los Caballitos and started planting 100 acres with bourbon and the rest of the farm with the caturra varietal. Los Caballitos has its own wet mill, which allows for meticulous quality control while processing the harvest. Parchment is transported to Antigua where it is stored and milled for export.
Tasting Notes: A nice clean, rich, and versatile coffee. Best from a medium to dark roast. Traditional Guatemalan tastes; chocolaty, malty and slightly floral. Has a little dry winy acidity upfront at a medium roast point which some will like, keeps the cup a little sweeter and crisper but for you low acidity fans, the darker you go the more it will mute up. Fuller bodied at the dark roasts with some complimenting smoky tones.
Roasting Notes: Easy to roast and good from light to dark. Slightly mottled in appearance at the light roast points, when it loses this mottling, a good indicator of a nice medium roast. Medium to low chaff. Setup will definitely smooth out the cup, a bit sharp if you drink it too soon.
