A unique, very fruit forward cup of coffee! A slow dry natural filled with floral and fruity characteristics. On the sweeter side and best in the light to medium roast range. All the lovely natural processed tones do co-mingle with the classic Costa nutty and chocolaty tones, but the stone fruit & lemony floral acidity are on the strong side in this cup.
El Cedral is a 24-acre model farm owned and operated by CoopeDota, which is located in the province of San Jose, Costa Rica.
CoopeDota was founded in 1960 and has 850 members living throughout the canton of Dota. CoopeDota strives to maintain a diversified business model selling roasted coffee for national consumption, operating a coffee shop and hardware store, and providing guided tours of coffee farms. CoopeDota also operates its own carbon neutral mill specifically designed for sorting high quality micro-lots, which helps to improve quality, increase earnings from coffee sales, and strengthen producer livelihoods. El Cedral was originally purchased to be an annex for the wet-mill, but over the last decade the elevation (over 1900 masl) of the parcel became prime property for growing coffee.
Since then El Cedral has served as a model farm for CoopeDota members looking for new strategies for cultivating coffee as the region’s climate continues to change.
Tasting Notes: A more delicate fruit forward refined cup of coffee. Very clean, sweet with dominate fruit (cascara/strawberry) and floral tones balanced with hints of nutty and chocolaty undertones. Traditional light roasts will have some crisp acidity while fresh leaning it a little more towards floral notes, we would call it front loaded but tasty. Not much balance with any darker tones and can end a little dry, but plenty wild upfront to make natural processed fans happy. Medium roasts will be best for most, medium to low acidity, hints of floral and fruit balanced with smooth and sweeter darker tones. Dark roasts themselves pick up a little bittersweet edge but have wonderful aromatics and good body.
Roasting Notes: High chaff and a little uneven roasting, would recommend erroring lighter than darker and pushing the roast a little on the second attempt if the cup is a little too bright or fruit forward for ones tastes. Setup helps smooth it out greatly, hard to wait but 48 hours after roasting will be decently smoother and more defined.
