Best from light to medium roasts, not your average cup of Colombian coffee! This cup shines with floral and jasmine aromatics, a tasty treat even before your first sip. A bit on the brighter side, there is some lemony crispness upfront that adds a lot of sweetness, balancing with a more chocolaty cup profile with added hints of nuttiness. As one pushes the roast darker, the acidity and crispness gets much milder, right around second crack, smooth and creamy but already picking up more roasty notes. We thought strong medium to dark roasts were still tasty, but more roasty and non-descript, error lighter than darker to see this cup shine.

Description

This lot comes from 5 producers (Ever Angel Guevara, Jose Elmer Cerquera Betancourt, Juan Dario Gomez Collazos, Eider Perdomo Claros, and Carlos Gabriel, Muñoz Silva) with small farms in the municipality of San Adolfo within the department of Huila.

Each producer focuses on selective picking, then floats the cherries to remove damaged and underdeveloped beans, depulps to remove the skin and ferments 24 hours to remove the mucilage when washing the coffee seeds. The wet parchment is pre-dried for a period of 8 days on raised beds and then mechanically dried to 11 percent moisture. After processing, Banexport provides crucial logistical support for things like warehousing and milling coffee for export to the international market, which provides better income for everyone to reinvest in their farms and strengthen their families’ livelihoods.

Roasting Notes: Light to medium roasts fit this cup great unless you don’t like floral and brighter characteristics. Even roasting, medium chaff, no giant tricks; easy to roast category. The lighter of a roast you shoot for, normally the more I slow down the roast. Can be pretty bright and front loaded if you shoot for super quick roasts, on the light side. These brighter cups tend to gain a lot of flavor on day 2-3 after roasting, so a little patience goes a long way.
