A good clean “classic” cup of Nicaraguan. Medium bodied and a little lower acidity. Very pronounced malty tones accompanied with just a hint of sweeter floral upfront at pre-second crack roasts. Into second crack these become fuller bodied with potent bitter-sweet malty and smoky tones. At a lucky roast point and with proper set-up one can pull a little hint of caramel around the full city mark.

Description

This cup is sourced from family-owned farms organized around Promotora de Desarrollo Cooperativo de Las Segovias (PRODECOOP), an umbrella cooperative operating in the departments of Esteli, Madriz and Nueva Segovia, Nicaragua.  PRODECOOP operates a centrally located dry mill facility and cupping lab where coffee is received, processed and selected for export.  In addition to marketing coffee internationally, PRODECOOP provides producers with financing, training, and technical assistance to improve coffee quality.  PRODECOOP also strives to improve the quality of life for coffee producers and their families through projects promoting income diversification and education.

Tasting Notes: A good clean “classic” cup of Nicaraguan. Medium bodied and a little lower acidity. Very pronounced malty tones accompanied with just a hint of sweeter floral upfront at pre-second crack roasts. Into second crack these become fuller bodied with potent bitter-sweet malty and smoky tones. At a lucky roast point and with proper set-up one can pull a little hint of caramel around the full city mark.

Roasting Notes: Avoid light roasts, they just do not build that malty tone enough. Medium to dark roasts are very tasty, if you want a smooth cup, keep it before 2nd crack. If you want a rough and tumble cup make sure to roast it into 2nd crack.

    Quite tasty! I made a cup of this for a non-distinguishing coffee drinker and he loved it. Apparently it makes a splendid generic, but delicious cup! Roast was medium to dark. I’d definitely order again, especially at $3.99/lb!

    This coffee was big surprise! I bought it because I’d like it’s history and the write up that Burman gave. It turn to be a great choice. Smooth with good mouth feel, and not a lot of acid. Will get this again
