Milton Dantas acquired Fazenda Chapadão de Ferro in the city of Patrocinio in 1993, when he left where he was raised in Parana for Cerrado Mineiro with the goal of becoming a coffee producer. Driven by a passion for coffee, he has grown operations little by little to reach a level of professionalism and differentiation through excellent controls in the field and post harvest techniques.
Together with his wife and children, Milton continues his exuberant work, offering coffee with excellent flavors and aromas. 18 of Fazenda Chapadão de Ferro’s 29 hectares are planted with Mundo Novo and Red Catuai varieties of coffee. The Chapadão de Ferro microregion is a small town with farms situated around the cone of a partially formed volcano. Farms here are at higher elevations above 1100 meters and coffee is harvested a month or two later than in other parts of Cerrado Mineiro.
Tasting notes:
At the lighter roast points it will have some stronger classic Brazil nuttiness jazzed up with hints of lemony acidity and soft red-fruit tones, very tasty and sweet edged. Pretty low acidity but you will see some until you hit the medium roast level. The cup gets real rich with strong nutty tones & slight intro into the chocolaty realm as you push towards 2nd crack.
Roasting Notes:
Versatile coffee good from light to dark. A little chaff heavy being a natural but roasts nice and even. Super light or super dark were the least favorite roasts for everyone here. A nice medium to borderline dark roast presented the cup nicely. For espresso good to get a little fuller roast to get some nice chocolate in the shot.
