Description
This coffee originates from small family farms situated in the heart of Las Segovias a mountainous region in northern Nicaragua renowned globally for producing the country’s highest-quality coffees. The farms are organized under PRODECOOP (Promotora de Desarrollo Cooperativo de Las Segovias R.L.), a second-tier cooperative founded in 1993 that brings together producers from the departments of Estelí, Madriz, and Nueva Segovia. This specific lot originates from the municipality of San Juan de Río Coco, in Madriz one of Nicaragua’s most iconic coffee-growing regions. The beans are cultivated at altitudes between 1,100 and 1,500 meters above sea level (classified as SHG Strictly High Grown), in volcanic soils rich in organic matter and under diversified shade cover, a practice that fosters biodiversity and complexity in the cup. The predominant varieties are Caturra, Bourbon, Catuai, and Typica. The coffee is grown organically (without synthetic agrochemicals), processed using the washed method, and sun-dried on patios. The harvest takes place between December and March.
PRODECOOP operates a centralized dry mill and cupping laboratory, where the coffee is received, processed, and selected for export. Beyond commercialization, the cooperative offers its producers financing, training, and technical assistance to enhance coffee quality, and promotes income diversification and education projects aimed at improving the quality of life for coffee-farming families.
Tasting Notes: A “classic” Nicaraguan cup clean and balanced. It features a medium body and mild acidity. Very pronounced malty tones are accompanied by a subtle floral and sweet touch in roasts prior to the second crack. Upon entering the second crack, the body becomes fuller, revealing bittersweet malty and smoky notes. At the optimal roast point (around Full City), a nuance of caramel may emerge.
Roasting Notes: Avoid light roasts they do not sufficiently develop the malty notes. Medium to dark roasts yield the most flavorful results. For a smooth cup, stop the roast before the second crack; for a more robust and intense profile, take it into the second crack.

Quite tasty! I made a cup of this for a non-distinguishing coffee drinker and he loved it. Apparently it makes a splendid generic, but delicious cup! Roast was medium to dark. I’d definitely order again, especially at $3.99/lb!

This coffee was big surprise! I bought it because I’d like it’s history and the write up that Burman gave. It turn to be a great choice. Smooth with good mouth feel, and not a lot of acid. Will get this again
