This is an Ethiopian Natural clone done up with some very cool single strain El Salvador beans. Much wilder and fruity than most El Sal offerings. Comes in half way between the Indo Bali Kintamani Natural and the more refined Ethiopian Natural Yirgs. If you liked those two, you will love this bean.
Finca Santa Leticia Pacamara, located near the town of Apaneca within the department of Ahuachapan, El Salvador, is owned and operated by Ricardo Valdivieso, a third generation coffee farmer, and his family. Ricardo’s grandfather purchased the land in 1870. Finca Santa Leticia Pacamara was passed down to Ricardo during a time of great turmoil in El Salvador’s history. At the peak of conflict in the 1980’s, Ricardo came face to face with a firing squad in defense of his family’s land. He was not shot but spent many years in exile before he was able to return to Finca Santa Leticia Pacamara. Today, Ricardo works with his daughter, Monica, to protect their groves of pacamara varietal from leaf rust. In addition to coffee, Monica operates a beautiful hotel and restaurant. Mayan artifacts discovered on the property by Ricardo’s father have also been preserved as an archaeological site for visitors to enjoy.

Tasting Notes:
Nice semi-sweet red fruit balanced with an earthy chocolate tone, a very lovely combo. The natural processing is not overdone and the cup is only super fruity at the very light roast points – at a full city roast the fruitiness is only a hint and balanced with the darker tones but readily identifiable. True to its Pacamara roots, this cup is fuller bodied and lower acidity. Very smooth compared to most other Pacamara beans – although it has that classic Pacamara earthy factor, it is not rough nor strong; very clean cup. Will win over the natural processed fans for sure.
Roasting Notes:
Light to medium roast is definitely the way to go. Very sweet with those nice red fruit complexities showing off nicely. Holds up throughout the roast spectrum but the classic washed and honey processed tend to do better at the darker roasts than this guy. Very clean cup, do not be afraid of those lighter roasts – very little risk of a grassy or underdeveloped roast.
