A very tasty cup but not super closely link to a top end Geisha, not a bad thing but just so you know what to expect. A blind tasting of this cup reminds me more of a Costa Rican than a traditional Nicaraguan or Ethiopian like Geisha coffee as the naming might suggest.
This cup is sweet, medium to low acidity with a chocolaty and floral cup profile. Best served in the medium to dark roast ballpark. The chocolatiness can come off a bit malty the darker you roast, more like Selva’s other beans at the fuller roasts but the cup definitely separates itself with the more floral attributes and sweeter edge. A great cup to drink all day long. Light roasts right at first crack can be a little grassy but doesn’t take much development past that to present a very tasty cup.

Very large bean size. I always have a sweet spot for Pacamara coffees, not only are they usually huge beans (which is always novel) but they carry a very sweet versus nutty earthy cup profile which I personally love. From Selva Negra, this Pacamara is on the milder end, smooth and a little fuller bodied. Only a hint of acidity at lighter roast points. Very clean cup holding up best from a medium to dark roast. Lighter roasts have some cool jazzy acidity but do not develop the nice nutty/malty tone enough to give cool balance. Strong side of medium will make anyone happy, creamy fuller bodied malty tones with a hint of sweetness upfront. Darker roast get strong and fuller bodied with the cup attributes complimenting the roasty notes. A good cup to drink all day long.

A very nice, super clean and fresh batch of their traditional farm aggregate. A little hint of citrus floral upfront balanced with nice complex malty tones. Light roasts have a bit more citric fruitiness with just a hint of malty factor. Our favorite and a great everyday drinker was at a medium roast, builds more of a chuggable cup with a sweet edge. Turns much stronger into the darker roasts but equally as tasty, fuller bodied with strong malty and smoky tones but still retains that sweeter edge to it.

Medium roasts were a cup everyone would love with smooth chocolaty tones, a hint of malt in the aftertaste, on the sweeter side. A very cool cup – Decent at the lighter roast points, the cup has some fruit forward tones with some nice and crisp acidity (floral/lemon) upfront, balanced with a nutty/malty dark tone. As one pushes more into the medium to borderline dark roasts, the acidity is muted up and that classic malty profile comes out in the cup with just a bit of red fruit accent, also very lovely and will appeal more to those who are not into over the top fruity and acidic cups. Darker roasts are not recommended with this bean, will turn pretty bitter and kill the exotic-ness of the cup.

Great light to medium roast coffee. Although we have carried the San Felipe lot for years, having the Geisha separate this season has brought a ton of new tastes. East to tell the difference when compared to the other strains Selva Negra grows. Best at the light to medium roast level, these beans have a bit more acidity than anything else from Selva Negra. The cup is very floral and citric especially at lighter roasts. Not quite jasmine floral, a little more traditional citric, but very tasty; delicate and sweet edged. Where one can see the prime Geisha attributes is in the darker tones of the cup, black tea spice jumps right out. Light roasts are heavy on the citric and floral balanced just a touch of tea like spice with herbal overtones. Medium roasts are where most will want to shoot, defined tea like spice with some sweet crisp floral upfront. Darker roasts turn a bit plain, still very drinkable but not much uniqueness.

Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

A lovely differentiating offering of unroasted coffee beans from Selva Negra. We though it best from a medium to dark roast, but those who love some very buzzy acidity will like it lighter. Decently more acidity than their other offerings; comes off complex and darker toned, which is quite unique for a Nic. Not like your normal more citric lemony/floral acidity. Leaves the mouthfeel pretty dry with base tones down the more nutty and malt like. Semi-sweet, with hints of floral and soft fruit that will linger on the tongue. Tasty science in action!

A nice medium to dark roast more potent Nicaraguan offering. Medium to full bodied with just a little hint of acidity. Strong Medium roasts were our favorite with thicker more complex malty tones, a sweet edge, hints of herbal spice and almost no acidity, a good daily drinker being very smooth. Darker roasts produce a similar cup but turn it semi-sweet with complimenting smoky tones, not quite as smooth but has the heft many darker roast fans will love.
