Thailand – Lanna Coffee – Law Wu – Honey Processed

Tasty honey processed but reminds me more of a washed processed. Not much for a fruit forward cup profile,  bigger bodied and darker toned, reminds me a bit of the Nicaraguan Selva Negra Honey Processed. Lighter roasts will show some nice clean lemony floral acidity but do not fully develop the nice robust chocolaty factor, interestingly enough, one gets a bit of African herbal/spice in the cup at the lighter roasts. Medium roasts are where we thought it shined, just a small hint of citric sweetness upfront with a good balance of spicy chocolate notes, unique spice, more like the Indian coffees. Darker roasts get more like the Dominican with strong bakers chocolate and smoky tones, a hefty cup with very low acidity.

Decaffeinated Nicaraguan Segovia FTO SWP

A very cool decaf. Malty with good body and sweeter edge to it. Lighter roasting comes of a little grassy but medium to dark will produce a wonderful & rich cup. Thicker, lower acidity and smooth. Darker roasts will add some smoky tones which tends to compliment the more malty cup profile. A great everyday drinker for you decaf fans.

Colombia Org Tolima RFA Saint Peters

A very nice silky smooth cup of coffee. A little hint of caramel, a little floral and on the sweeter side. A bit of nutty chocolaty factor balances the cup out and reminds you this is a Colombian.

Zambia AAA/AA Mafinga Hills RFA – Full Natural

A fuller bodied cup with higher acidity and very fruit forward. A fun cup to play with in with in the roaster. Light roasts have a pretty citric acidity upfront that fades into a fruity factor with just a little hint of its chocolaty undertone, clean enough to drink here but be ready for the more floral and acidic front loaded cup profile. Medium roasts are where we thought it shined; jammy body, lots of red fruit like tones balanced with a chocolaty undertone, exotic and sweet. Right around 2nd crack works but burns out much of the fruity and acidic notes that separate this cup from the Washed or Honey processed.

Zambia AAA/AA Mafinga Hills RFA – Honey Processed

Bright, crisp and clean cup- similar to the washed processed but a little less of a spice/herbal note, it is mostly replaced with a great but not overly done fruity accent, a little melon/strawberry tone on the front end of the cup.

Zambia AAA/AA Mafinga Hills RFA – Black Honey

A very cool cup. Bright, crisp and clean cup- similar to the washed processed but a little less of a spice/herbal note.  A little melon/strawberry mixing with some lemony floral tones on the front end of the cup balanced with a classic  African bakers chocolate undertone. A little hint of caramel can be found at strong medium roasts. 

Zambia AA Mafinga Hills RFA – Washed Processed

Costa Rican – Las Lajas Micromill – Finca Calle Liles – “Alma Negra” (Black Soul) Natural

A stellar fruit forward cup of coffee.  Similar to the Black Pearl Processing but a little stronger and more wild in its fruity factor. Super clean, medium bodied with some decent acidity. Lighter roasts are a bit higher acidity giving some great sweetness and a stronger winy grape and red fruit tone balanced with a more malty dark tone, a coffee version of jellied toast.  Medium roasts reduce some of the wild fruity aspects of the cup along with reducing the more acidic notes, but build much more of a malty chocolaty tone.  The cup retains a more refined tart red fruit note (think cranberry) up until 2nd crack.

This cup is nice and chocolaty like most of the Honduran coffees, lower acidity and medium bodied. A sweeter edge to it before hitting second crack. Clean, rich and very drinkable. Medium roasts were our favorite but might be a little mild for some.  Shoot for touching second crack if you like a strong cup, it will pick up a little smoky tone into 2nd crack.

Mexican FTO Altos De Chiapas SHG EP

A great daily drinker! Very nice and chocolaty cup of coffee. A nice clean lemony crispness upfront at the light to medium roasts especially as the cup cools. A little underdeveloped tasting at light roasts (cinnamon to city), really starts coming together around the medium roast points (city+ to full city) and is a very nice dark roast candidate for those who love some complimenting roasty notes. Assuming you roast it a little closer to 2nd crack, it will develop a medium body and far reduced acidity but won’t loose it sweeter edge. A couple pops into 2nd crack produce still very clear and smooth chocolaty tones without adding over-the-top roasty notes.

A nice and clean cup of Peru coffee! Lovely daily drinker. Lighter roasts show hints of lemony acidity and floral notes, on the sweeter side. Pulls some balance with nutty & chocolate tones but fairly faint at the lighter roast points. Medium roasts mute up most of the acidity and floral tones, bringing out much more of a chocolaty cup profile with a little nuttiness in the aftertaste, still a nice sweet edge to it. Very smooth cup with a medium to full body. Darker roasts are still very smooth but become much more semi-sweet and smoky with dark chocolate lingering in the aftertaste.

Best medium to dark roast, a great everyday drinker. This cup is nice and chocolaty with some nutty accents, just like a good Honduras should be. Lower acidity and medium bodied, a sweeter edge assuming its not roaster super dark. Clean, rich and smooth cup with nutty and chocolate tones. Medium roasts were our favorite but might be a little mild for some. One can put a little heft and stronger bakers chocolate tone by touching or going slightly into second crack.

Mexican SHG Chiapas – Seleccion Motozintla – Washed Processed

A great daily drinker! Lovely cup from light to dark roasts; a nice solid medium roast was our favorite. Sweet nutty, caramel and toffee like tones at the light to medium roast points, a bit more chocolaty/nutty at the darker roast points.

Lighter Roasting:
Lemony crispness upfront, slightly floral, medium bodied pushing into a fuller bodied cup at darker roasts. Hints of a soft fruit tone as the cup cools.

Darker Roasting:
Big bodied, semi-sweet and very chocolaty with some nuttier accents. Still a very smooth cup up until French Roast (decently into 2nd crack). Picks up some complimenting roasty/smoky notes as one approaches 2nd crack.

Medium roasts clean up the more rustic chocolaty tones which many will like but also reduce the sweetness and fruity factor of the cup, becomes a little fuller bodied with low acidity with good mouthfeel, fruity factor pops out more as the cup cools. Darker roasts get a bit edgy with semi-sweet smoky and roasty notes, finishes with almost a bit of an oaky barrel aged tone.

Will get a little smoky edgy aftertaste once touching second crack if drank too quickly, a couple day setup smooths it out greatly.

Tanzania RFA Edelweiss Estate AB

A very clean, smooth and rich cup that will appeal to almost every coffee drinker. A little hint of new crop acidity that is accentuated at the lighter roast points, gives a little soft fruit tone at all but extremely light or dark roasts. Unlike the peaberry, the AB screen is a bit more a caramel like tone, especially as it cools. It will turn chocolaty if you roast dark enough. Builds body and chocolaty factor the darker you roast it – once you hit 2nd crack it kills a bit of the smoothness and turns a little more bakers chocolaty with some pleasant smoke and roasty notes.

Tanzania RFA Edelweiss Estate PB

A very clean, smooth and rich cup that will appeal to almost every coffee drinker. A little hint of new crop acidity that is accentuated at the lighter roast points, gives a little soft fruit tone at all but extremely light or dark roasts. Very chocolaty cup especially once you get past a medium roast. Builds body and chocolaty factor the darker you roast it – once you hit 2nd crack it kills a bit of the smoothness and turns a little more bakers chocolaty with some pleasant smoke and roasty notes.

Good body with a pronounced toasted walnut and bakers chocolate undertone. A bit of acidity upfront at lighter roast makes it an interesting cup at almost any roast point. Lighter roast promote a bit of herbal spice between the citrus and chocolaty factor – on the sweeter side. Strong medium to dark roasts mute up almost all of the spice notes (the stronger chocolaty tones cover it up) and the cup becomes big bodied and bakers chocolaty.

Medium bodied and clean; very chocolaty cup profile with some nice citrus floral overtones. Lighter roasts will have strong citrus and floral aspects, a bit too much for most unless you love a sizzling cup. Medium roasts get very balanced, hints of floral and citrus fruit with a smooth and rich chocolaty undertone. Dark roasts get much fuller bodied with stronger bakers chocolate and smoke. If you go between a city and full city roast, one gets a nice brown sugar like tone while the cup is super hot, as it cool the chocolate versus citrus pops right out.

Tanzania RFA Edelweiss Estate Carbonic Maceration

A decently clean cup that fits right in between the honey processed and washed processed offering. It looks more like a honey but tastes a bit closer to the washed. Lighter roasts produce the highest acidity out of the three Edelweiss offerings giving a bit more sweetness upfront and stronger floral tones. A bit fuller bodied than the washed processed the cup gets nice and creamy at the full city roasts level. Darker roasts accentuate the spicy malty chocolate notes.  Although it looks like a natural appearance wise, it is not a fruit forward cup like the actual honey processed. The oxygen-less processing really brought forth some cool attributes from natural/honey processing without the fruity factor.

Tanzania RFA Edelweiss Estate Honey Process AB

A very cool crisp and clean cup of coffee. A little fruit forward but not over the top, at almost any roast one will get a faint red fruit tones lingering in the aftertaste. A little brighter cup that is tailored to before 2nd crack roasts. Very chocolaty with a medium body balanced with nice floral sweet acidity upfront and a hint of honey processed red fruit in the aftertaste.

Tanzania RFA Edelweiss Estate Washed Process Peaberry

A very cool crisp and clean cup of coffee. The washed processing is the “traditional” processing method and the cup presents the “normal” Tanz tones very nicely. Nice lemony floral notes upfront giving the cup a nice sweet crispness at the lighter roast points. Tasty semi-sweet chocolate notes balance the cup out, a bit on the herbal spice side of things like most Africans. Darker roasts get real low acidity and fuller bodied while maintaining a smoothness not often found in some dark roasts.

Zambia AAA/AA RFA Kateshi Estate Yellow Honey

We thought this cup was best between a medium roast to just before 2nd crack roasts. Good bit of citrus crispness with pretty floral aromatics balancing with a bit of bakers chocolate and spice. Similar to the washed processed but a little fuller bodied with a little different acidity. Lighter roasts get very jazzy acidity with strong citric notes but can come off a little earthy, a longer setup helps with light roasts. Dark roasts get even fuller bodied but burn out the more floral tones (low acidity) which balance the cup so nicely, adds in some toasty smoky notes which some will like.

Tanzanian RFA Finagro Estate Washed Processed AB

A very cool crisp and clean cup of coffee. Has the same cup profile as Kenya, Burundi and Rwanda; a bit milder than the Kenya’s but with the same flavor diversity. Some brightness upfront but not over the top, adds some nice sweetness and crisp floral upfront balanced with a nice and chocolaty cup with some complimenting spice notes lingering in the aftertaste. Super light roasts are off balance a bit, medium roasts bring out a lovely cup and this is a great dark roast candidate, very thick and creamy with a wonderful chocolaty factor.

Rwanda RFA Dukunde Kawa Musasa – Natural Processed

This coffee shines at a light to medium roast. Very clean cup, some hints of lemony acidity upfront, floral aromatics and very clear red fruit and berry tones in the cup. Although considered on the sweeter side, the fruitiness comes off a little dryer, more of a cascara like fruitiness. Very light roasts are a bit front loaded, not much of a chocolaty factor but wild, higher acidity and exotic. Medium to dark roasts build a smooth more chocolaty undertone, balances very nicely with the more fruit forward cup profile.  Dark roasts themselves get a little smoky and roasty chocolaty factor but the fruitiness still comes through nicely making this a tasty cup from light to dark.

Uganda Mount Elgon RFA – Sironko Budadiri – Washed Processed

Medium bodied and lower acidity for an African. Best served at a medium to dark roast. Fuller bodied with just hints of citric and floral tones balanced with more rustic bakers chocolate. Far less spicy and herbal than its Kenya or Tanz cousins but you may taste hints, adds some nice complexity to the cup. As the cup cools a little one may notice a slightly melon soft fruit tone, pretty faint but adds a little sweet spot to the stronger cup character. Darker roasts pick up some nice complimentary roasty tones mixing with more of a bakers chocolate semi-sweet note.

Half Pound Indonesian Bali Blue Moon RFA Org.

A very rich, clean, and smooth cup. A cousin to Sumatra or Sulawesi coffee; Blue Moon always is a bit smoother without as much earthiness. A little hint of sweet acidity balanced with a nice chocolaty molasses undertone. Medium to full bodied with low acidity, a nice daily cup. Hints of slight smoky tones and soft fruit can be found, especially in a darker roast.

Half Pound Uganda RFA Org. Sipi Falls Bugisu Washed Processed

These exotic unroasted coffee beans result in a nice clean and balanced cup, medium bodied and lower acidity for an African. Lighter roasts will still be a little citric and floral balanced with a bakers chocolaty undertone with very little of that traditional African spice note. Medium roasts mute up the acidity and leave a little hint of a floral and developing a little soft fruit tone mixing with a smoother but still semi–sweet chocolate tone. Darker roasts pick up some nice complimentary roasty tones mixing with more of a bakers chocolate semi-sweet note.

Tasty from light to dark, a great jazzy everyday drinker. Medium bodied with medium to low acidity. This cup has great contrast between the sweet floral and nutty/chocolaty undertones. Lighter roasts are tasty but a little dryer, the floral factor pops right out with just a hint of a lemony acidity and a soft fruit tone. Nutty and chocolaty tones can be found especially as the cup cools. Medium roasts were our favorite roast point, pronounced and smooth darker tones with very floral aromatics and a sweet edge. Works great darker as well but will pick up stronger bittersweet tones.

Guatemalan Huehuetenango Finca Vista Hermosa “Mirador” Natural Processed

This is the farthest from “classic” Huehue tasting coffee out of the FVH lineup. Way overly fruity cup profile, some clean citrus acidity upfront quickly fading into a wild red fruit tone with just a hint of a little boozy factor, balances very favorably with a dryer malty finish. This is a bit of an extreme example of a slow dry Natural. (Ethiopian Sidamo Natural, Indo Bali Kintamani, Nicaraguan Brisas, El Sal Santa Leticia Pacamara Natural style cup) Edwin did it up very nicely but if unsure if you love very fruity naturals, don’t stock up on this guy.

A great daily drinker! Good from light to dark but we recommend a medium roast for most. Very smooth and rich, chocolaty cup of coffee.

Lighter roasts will have a stronger lemony crispness upfront, a little risk of herbal/veg if you roast too quickly or don’t let it setup, but dialed in, has a tasty balance between lemony floral & hints of nutty caramel. 

Medium roasts are balanced and smooth, takes the more soury edge and floral notes out of the cup and heads it more towards a rich semi-sweet chocolaty cup with some nuttier accents. The body and mouthfeel of the cup get much thicker making this a wonderful daily drinker. Smooth and fairly neutral with some cool darker toned complexities. 

Darker roasts getting close to, or touching 2nd crack make a wonderful espresso shot. Very chocolaty cutting right through a little milk. Works nicely for pour overs or drip as well but will accentuate a little roasty factor. Compliments the chocolaty notes but kills some of balance.  

Guatemalan Premium San Miguel Bonanza Pacamara

A very clean and rich cup of Guatemalan coffee. Although a Pacamara, this coffee does not follow the earthiness that often accompanies the strain. Lighter roasts show good soft fruit tones upfront while not being overly acidic, a little hint of a lemony floral and balanced with a nice malty cup profile. A bit sweeter than average for sure and a nice clean tasting cup. Medium roasts bring the best balance accentuating the darker tones in the cup slightly and reducing a little bit of the more acidic fruitiness of the cup. Darker roasts get real full bodied but does not retain the cool sweeter soft fruit tones, smoky, malty and strong.

Tanzanian Nglia Estate Ngorongoro AB Honey Processed

Premium Coffee Beans from Tanzania

Very complex Tanz cup with a complimentary hybrid honey processing (which is super rare for a Tanz coffee). A bit of floral and red fruit upfront balancing with a nice classic Tanz chocolaty factor. Clean as a whistle and tasty at almost any roast profile. For you natural processed fans, take it a bit lighter to accentuate the fruitiness of the cup. If a classic African fan, a nice full city roast is the way to go. The honey processing will only add some cool aromatics and just a hint of a soft fruit tone at any roasts nearing or into 2nd crack.

Silky smooth, clean as can be with awesome depth of flavor. A bit higher acidity at the lighter roasts but comes off very balanced in the cup tones. Citric lemony brightness with a little hint of soft fruit notes balancing with a  complex chocolaty undertone with just the right amount of classic herbal African spice. Light roasts although tasty and clean, are much more extreme with the acidity and herbal spice notes. A strong medium roasts mellows greatly into a more chocolaty profile with still identifiable jazzy notes. Dark roasts turn much more traditional with some smoky bakers chocolate tones.

Antigua’s are generally gentle cups of coffee, good everyday drinkers. Smooth, rich and clean, this is a great example. Lighter roasts will be more floral than chocolaty with some clear acidity, clean cup but enough acidity some might want to avoid lighter roast points. Medium roasts are well balanced and much smoother,  chocolaty with just a hint of crispness, a little spice note pops out in the aftertaste. Darker roasts are stronger and fuller bodied, chocolaty, not too roasty with just a hint of floral in the aftertaste and as the cup cools.

Ethiopian Yirgacheffe Worka Chelchele – Washed Gr. 2

Good from light to dark but we thought best at a strong medium to dark roast. Light roasts are more citric and floral with wonderful aromatics a sweet edged, a bit punchy in the citric department and very little of that wonderful chocolate tone that fuller roasts will bring. Medium roasts will bring some lovely balance to the cup, less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. A pinch of crispness upfront on top of a well developed chocolaty base tone. A unique spice note pops out, a stretch for some, but we would say slightly minty. Darker roasts are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.
