Nicaraguan Premium Selva Negra – San Felipe Geisha – Washed Processed

Great light to medium roast coffee. Although we have carried the San Felipe lot for years, having the Geisha separate this season has brought a ton of new tastes. East to tell the difference when compared to the other strains Selva Negra grows. Best at the light to medium roast level, these beans have a bit more acidity than anything else from Selva Negra. The cup is very floral and citric especially at lighter roasts. Not quite jasmine floral, a little more traditional citric, but very tasty; delicate and sweet edged. Where one can see the prime Geisha attributes is in the darker tones of the cup, black tea spice  jumps right out. Light roasts are heavy on the citric and floral balanced just a touch of tea like spice with herbal overtones. Medium roasts are where most will want to shoot, defined tea like spice with some sweet crisp floral upfront. Darker roasts turn a bit plain, still very drinkable but not much uniqueness.

A very nice and super fresh batch of their traditional farm aggregate. A little hint of citrus floral upfront balanced with nice complex malty tones. Great everyday drinker at a medium roast, balanced with a sweet edge. A heftier cup at the darker roasts and equally as tasty, fuller bodied with strong malty and smoky tones but still retains that sweeter edge to it.

A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

Nicaraguan Premium Selva Negra – Yellow Catuai – Natural Processed

A very cool exotic cup best at the light to medium roast points but tasty from light to dark. The cup is a bit sweeter and brighter than the washed or honey processed. At lighter roasts one will get hints of citric and red fruit tones balancing with a slightly herbal malt like darker tone. Takes a little longer setup after roasting but clean and easy drinking at the lighter roast points. Medium roasts move the fruitier tones to the aftertaste and pronounce the rich maltiness of the cup. The red fruit can be more easily seen as the cup cools, or in cold brew. Darker roasts are hardly fruity but retain the sweet edge, a little smoky/roasty/malt like note makes for a tasty treat.

A wonderfully complex light to medium roast coffee. Light roasts are lemony and floral upfront which fades to stronger apple like fruitiness with some red fruit accents, balances with a hint of a chocolaty darker tones. Medium roasts clean up the more rustic chocolaty tones which many will like but also reduce the sweetness and fruity factor of the cup, a little fuller bodied with low acidity with good mouthfeel, fruity factor pops out more as the cup cools. Darker roasts get a bit edgy with semi-sweet smoky and roasty notes, finishes with almost a bit of an oaky barrel aged tone.

Costa Rican – Las Lajas Micromill – Finca Chilamate – “Black Soul” Natural

Best served at the lighter roast points. Clean and bright, this microlot opens with intense notes of cherry and stone fruit that evolve into jammy blackberry and red grape. A pronounced, wine‑like acidity lifts the cup, while the sweetness of honeyed caramel weaves a velvety body. Subtle floral hints of jasmine and hibiscus persist on the finish, offering a fresh, clean aftertaste that reflects the Chacón family’s extensive natural drying and resting protocols. A very tasty cup but not super closely link to a top end Geisha, not a bad thing but just so you know what to expect. A blind tasting of this cup reminds me more of a Costa Rican than a traditional Nicaraguan or Ethiopian like Geisha coffee as the naming might suggest.

This cup is sweet, medium to low acidity with a chocolaty and floral cup profile. Best served in the medium to dark roast ballpark. The chocolatiness can come off a bit malty the darker you roast, more like Selva’s other beans at the fuller roasts but the cup definitely separates itself with the more floral attributes and sweeter edge. A great cup to drink all day long. Light roasts right at first crack can be a little grassy but doesn’t take much development past that to present a very tasty cup.

Very large bean size. I always have a sweet spot for Pacamara coffees, not only are they usually huge beans (which is always novel) but they carry a very sweet versus nutty earthy cup profile which I personally love. From Selva Negra, this Pacamara is on the milder end, smooth and a little fuller bodied. Only a hint of acidity at lighter roast points. Very clean cup holding up best from a medium to dark roast. Lighter roasts have some cool jazzy acidity but do not develop the nice nutty/malty tone enough to give cool balance. Strong side of medium will make anyone happy, creamy fuller bodied malty tones with a hint of sweetness upfront. Darker roast get strong and fuller bodied with the cup attributes complimenting the roasty notes. A good cup to drink all day long.

A lovely differentiating offering of unroasted coffee beans from Selva Negra. We though it best from a medium to dark roast, but those who love some very buzzy acidity will like it lighter. Decently more acidity than their other offerings; comes off complex and darker toned, which is quite unique for a Nic. Not like your normal more citric lemony/floral acidity. Leaves the mouthfeel pretty dry with base tones down the more nutty and malt like. Semi-sweet, with hints of floral and soft fruit that will linger on the tongue. Tasty science in action!

A nice medium to dark roast more potent Nicaraguan offering. Medium to full bodied with just a little hint of acidity. Strong Medium roasts were our favorite with thicker more complex malty tones, a sweet edge, hints of herbal spice and almost no acidity, a good daily drinker being very smooth.  Darker roasts produce a similar cup but turn it semi-sweet with complimenting smoky tones, not quite as smooth but has the heft many darker roast fans will love.

Nicaraguan SHG Org. San Juan De Rio Coco

A good clean “classic” cup of Nicaraguan. Medium bodied and a little lower acidity. Very pronounced malty tones accompanied with just a hint of sweeter floral upfront at pre-second crack roasts. Into second crack these become fuller bodied with potent bitter-sweet malty and smoky tones. At a lucky roast point and with proper set-up one can pull a little hint of caramel around the full city mark.

Nicaraguan FTO SHG EP Segovia

Clean, rich and sweet, a top notch example of Nicaraguan coffee. Medium bodied, a  little hint of lemony citrus at the lighter roasts balanced with a nice sweet and smooth caramel/malty tone. Medium to dark roasts get fuller bodied and introduce some nice smoky and roasty accents into this very malty cup profile. Dark roasts into second crack turn a bit less sweet but work wonderfully for espresso or mixed beverages. Great bean as a single-origin drinker or blend base.

Nicaraguan Jinotega SHG EP Olomega

Rich, sweet and malty, a good example of Nicaraguan coffee. Best from a medium to dark roast. Medium bodied cup with lower acidity and a sweet edge. A hint of citrus crispness at the medium roast level. 2nd crack or darker the cup will be bolder with no citric component, adding some complimenting smokiness into the malty dark tones. We did also enjoy this coffee at a light roast; a softer and sweeter cup but will risk a little earthy/nutty/grassy if too light.

Nicaraguan Canta Gallo FTO SHG EP

Rich, sweet and malty, a good example of Nicaraguan coffee. Best from a medium to dark roast. Medium bodied cup with lower acidity and a sweet edge. A hint of citrus crispness at the medium roast level. 2nd crack or darker the cup will be bolder with no citric component, adding some complimenting smokiness into the malty dark tones. We did also enjoy this coffee at a light roast; a softer and sweeter cup but will risk a little earthy/nutty/grassy if too light.

Works well light to dark but we liked it best at a standard medium roast. Smooth and sweet, lower acidity, a fuller body, good mouthfeel with rich malty tones.  If you take it a little lighter, picks up some lemony/floral crispness, can bring out a little hint of caramel and slight floral overtones, but risks a little more grassy contrast versus malty. Darker gets a little roasty tasting but its a compliment to the sweeter malt like tones, works nicely for a sweet edged classic tasting dark roast bean.

Best at a medium to dark roast. fuller bodied with rich malty semi-sweet undertones, a little hint of lemony citrus at the medium roast level when fresh but a low acidity offering overall, can bring out a little hint of caramel and slight floral overtones, a little sweeter and smoother cup. Will get a little smoky edgy aftertaste once touching second crack if drank too quickly, a couple day setup smooths it out greatly.

Nicaraguan Org SHG EP Santa Lucila

A very easy drinking super fresh coffee. Lighter roasts show slight hints of lemony floral brightness with a little sweeter edge, balanced with a bit dryer malty undertone. A clean cup with nice complexity, soft enough acidity to be an easy to drink daily coffee. Medium roasts reduced the acidity but retained a little floral tone, body (thickness) increased nicely and the cup lost its more delicate sweeter edge, replaced it with a complex strong malty tone with some smoky accents, still very smooth before 2nd crack, stronger smokier and edgier into 2nd crack.

Guatemalan Huehuetenango Finca Injertal RFA SHG EP

A great clean classic Guatemalan cup that everyone will enjoy. Lower acidity with a little fuller body, a sweet and semi-fruity edge with a smooth chocolaty undertone. Lighter roasts will put a little winy citric edge to the cup, darker roasts will remove the fruitiness of the cup and provide a bit more bakers chocolate smokiness.

El Salvador SHG Finca Santa Josefita Bourbon Washed RFA

A very cool natural type cup that almost anyone will love. Although this cup does have some classic natural fruit tones, it is not overly done – you get a little dry cascara type note in the background. Very smooth, good body, lower acidity at most roasts with a nice malty/chocolaty note coming forward. Not quite as mild as last years offering with its stronger malty notes but a very clean cup with an exotic spin.

Lighter roasts are a bit higher acidity giving some great sweetness and a stronger winy grape and red fruit tone balanced with a more malty dark tone, a coffee version of jellied toast.  Medium roasts reduce some of the wild fruity aspect of the cup along with reducing the more acidic notes but builds much more of a malty chocolaty tone.  The cup retains a more refined tart red fruit note (think cranberry) up until 2nd crack.

Costa Rican Las Lajas Micromill – Finca San Luis – “Perla Negra” (“Black Pearl”) Natural

A stellar fruit forward cup of coffee. Similar to the Black Soul Natural, this cup is smoother and more delicate but contains much of the same flavors as the Black Soul. Super clean, medium bodied with some decent acidity. Lighter roasts are a bit higher acidity giving some great sweetness and a stronger winy grape and red fruit tone balanced with a more malty dark tone, a coffee version of jellied toast.  Medium roasts reduce some of the wild fruity aspects of the cup along with reducing the more acidic notes, but build much more of a malty chocolaty tone.  The cup retains a more refined tart red fruit note (think cranberry) up until 2nd crack.

A stellar fruit forward cup of coffee. Similar to last season, this cup is smoother and a little more delicate but contains much of the same flavors our Lajas natural fans are used to. Super clean, medium bodied with some decent acidity and strong fruity and boozy tones.

Lighter roasts are higher acidity with a strong fruitiness. Citric, floral and fruit will dominate the lighter roast tastes. Gives the cup some great sweetness and pops right out those natural processed tones many love. Pulls just a pinch of balance with a malty, oak like darker tone.  Medium roasts smooth out the wild fruity and acidic tones, builds more of a malty/chocolaty tone in the cup with the fruit/floral highlights.  The cup retains a more refined tart red fruit note (think cranberry) up until 2nd crack. A bit of a barrel aged taste as the cup cools throughout the roast points.

Great daily drinker from medium to dark roasts. Good body and lower acidity, nice and strong semi-sweet malty tones with a hint of herbaceous spice in the aftertaste. At the light to medium roasts it will show just a pinch of crispness and a hint of earth, not super citric but will leave a dryness to the tongue, a bit floral in its aromatics but not in the cup. Just before to touching 2nd crack gets rid of almost all signs of any acidity and adds some complimenting smoky and roasty tones to the cup profile. A very smooth cup from a medium roast to just before 2nd crack. Into 2nd crack will get some edgy strength that dark roast fans will like.

Nicaraguan Jinotega Org. Finca El Pastoral

A great tasting medium to dark roast Nicaraguan coffee. Medium bodied, a  little hint of lemony citrus at the lighter roasts balanced with a nice sweet and smooth malty tones. Medium roasts are the sweet spot, lower acidity, smooth and developed with a sweeter edge. Darker roasts get fuller bodied and introduce some nice smoky and roasty accents into this very malty cup profile.

Good from light to dark, a solid medium roast was our favorite. Medium bodied with low acidity, a creamy and smooth cup. Sweet edged with good depth of flavor. Classic and rich nutty/chocolaty tones with a hint of caramel. A cup anyone will love. Light roasts add a little hint of floral, darker roasts are stronger and more semi-sweet, we did not find a roast we didn’t like. A fun coffee to play with roast level.  

Honduran Siguatepeque Alpino SHG EP

Great daily drinking cup medium to dark roasted. This cup is nice and chocolaty, lower acidity and medium bodied. A little sweeter edge to it except for super dark roasts. Besides a chocolaty factor one will get some nuttier characteristics coming through in the cup. We all thought it was at its best right around a full city – smooth and rich without too much of a roasty note with great chocolaty tones.

Thailand – Lanna Coffee – Doi Inthanon – Honey Processed

Tasty honey processed but reminds me more of a washed processed. Not much for a fruit forward cup profile,  bigger bodied and darker toned, reminds me a bit of the Nicaraguan Selva Negra Honey Processed. Lighter roasts will show some nice clean lemony floral acidity but do not fully develop the nice robust chocolaty factor, interestingly enough, one gets a bit of African herbal/spice in the cup at the lighter roasts. Medium roasts are where we thought it shined, just a small hint of citric sweetness upfront with a good balance of spicy chocolate notes, unique spice, more like the Indian coffees. Darker roasts get more like the Dominican with strong bakers chocolate and smoky tones, a hefty cup with very low acidity.  

Thailand – Lanna Coffee – Law Wu – Honey Processed
