Premier is a word that means “first” that comes from the Latin word “primarius.” It should come as no surprise then that Sencha, like our Sencha Premier, stands at the top of all Japanese ryokucha, or green teas. Representing eighty percent of all green tea production in Japan, it is from Sencha that nearly all other Japanese green teas are made, be it shade grown Gyokuro, roasted Hojicha, or ground Matcha. Unlike Chinese green teas, ryokucha are steamed rather than pan-fired to stop oxidization, which results in greener teas and more vegetal flavors.

This is the real thing. I have tried and tried to find Japanese tea like I had in Tokyo back in ’95. I finally found it. This was the flavor. Good stuff. I’ve tried several Sencha teas but had almost decided I just wasn’t going to find it outside of Japan. Make sure you steep it at around 175, not boiling.

This is an outstanding green tea! Follow the recommendation for steeping time. I use a 15oz glass TeaBloom steeper and a 8oz cup. Instead of my usual full pot of 15oz’s (two cups) I only make a 8oz cup of this at a time. The longer you let it steep over a couple of minutes the more astringent it becomes, to the point of being bitter after about 8-10 minutes. I weigh my teas instead of spooning since densities vary between different varieties of teas, typically using 5-6 grs per cup. Maybe 5grs of this is too much? Whatever, but it sure is good! Trust me – just don’t over steep it! 😋
