Exotic for a Huehue. It has a sweet fruit note in the aromatics but just a hint in the cup. The hint is a little tropical fruit note at the light roasts along with winy/citrus factor. Wilder in its tones, gets a little spice and herbal tone mixing in with the classic malt back end. Way cool but very dependent on roasts. I liked it best around a full city, built good body and muted some of the acidity for an easy drinking cup. From light to dark, this cup will make fans! and smoky.

An awesome offering from our buddies over at Onyx Coffee (Edwin Martinez and his/our buddies). This is one of the top scoring Huehues to hit so far in the year and personal buddies with Edwin and his family.

Don Noe Castillo’s mother worked Finca Buena Esperanza for more than 40 years. She was a widowed woman and raised her family as a single mother. Currently all Noe’s brothers work together on the farm. Don Noe being the oldest, supports everyone by properly managing resources. They strive to use organic products to fertilize their crops. They are always working hard to improve their shade trees, patios, and drying times. Their goal is to have the best quality micro-lots and continue to create more separations.

Roasting Notes: A nice and easy one to roast. All these beans went through the wet-mill together, which boils down to this coffee roasting nice and even. No tricks to it here. A good dense high altitude coffee, will pick up a sheen at lighter roasts and may be a shade lighter than you think. If shooting for light roasts, an extra day of setup would be good.
